Anchovies are a famous specialty of the South Central Coast in general, and Phu Yen in particular, which people from the lowlands to the highlands love. Anchovies with glue are delicious to the tip of the tongue, and can be eaten with white porridge or rice.
With a coastline of nearly 190km, Phu Yen province is famous in the South Central region for its abundant anchovy resources.
Anchovies can be used to make many delicious dishes when fresh, used to make fish sauce or dried to save for later use, especially on cold winter days.
Early in the morning, just returning from an overnight fishing trip, Mr. Bui Van Long in Xom Cat village (An Hoa Hai commune, Tuy An district, Phu Yen province) shared: "I and some brothers in the village just returned from a purse seine. Recently, anchovies have appeared densely, each trip catches from a few dozen to nearly a hundred baskets of fish. After deducting expenses, each person earns half a million a night."
According to Mr. Long, in Xom Cat village, fishermen cast a seine net around Yen island. The seine net is large and hundreds of meters long. When seining, they wait for the net to "embrace" all the fish, then retract, pull it onto the boat, bring it to shore, sell it to wholesalers, and sell it at the market.

Fresh anchovies bought and braised in ketchup are extremely delicious. Braised anchovies have a delicious aroma from the tip of the tongue, can be eaten with white porridge or rice.

During rough sea season, boats do not go fishing for anchovies, many families in the mountains eat dried anchovies every day.
Many people say that eating fresh anchovies without eating dried anchovies is only knowing half the deliciousness of anchovies.
Mr. Tran Van Sam in Thanh Duc village (Xuan Quang 3 commune, Dong Xuan district, Phu Yen province) said: Thanh Duc is isolated on the other side of Tra Buong river, far from the commune center. During the rainy season, the roads are cut off by rivers and streams, so people cannot go to the market, so they store dried anchovies at home. Dried anchovies can be fried, deep-fried or used to make sour dishes.
Sipping on golden-fried dried anchovies with neighbors, discussing farming, crops, family economic development, building new rural areas..., Mr. Bui Van Nghia in Xuan Phuoc commune (Dong Xuan district) said: "In the countryside, we sip on golden-fried dried anchovies mixed with roasted peanuts, sprinkled with a little fish sauce, crushed with chili, garlic, lemon, sugar... it's delicious."
