Unique 14-legged sea beetle ramen

Since The Ramen Boy ramen restaurant launched its limited edition bowl of noodles on May 22, more than 100 people have registered to wait to enjoy this unique noodle dish.

According to The Ramen Boy, this restaurant had to wait a long time to get the ingredient of giant sea beetles (isopods) to make the special noodles.

“It looks very attractive at first glance, it looks very cute,” said Mr. Hu, owner of The Ramen Boy restaurant.

“In terms of preparation, we use the simplest method, which is steaming, so creating a special bowl of ramen is not too difficult,” Mr. Hu added.

The restaurant steams the isopods for 10 minutes before topping them with a bowl of ramen in a thick chicken and fish broth. Each bowl costs NT$1,480 (about US$48).

One customer said the isopod meat tastes like a cross between crab and lobster with a dense and slightly chewy texture.

According to the National Oceanic and Atmospheric Administration (NOAA), isopods are giant arthropods, distant relatives of crabs and shrimp. They are also the largest of the thousands of species in the crustacean group.

Sea sponges are usually found at depths of about 170 - 2,140 m below the sea floor, 80% of this species live at depths of 365 - 730 m.

Since the giant sea bug ramen was introduced, some scholars have expressed concern about the potential ecological impact of trawling by fishing boats to catch isopods. There are also health concerns for humans about eating sea bugs.

However, most of The Ramen Boy's diners do not care about the above problem.

“If it was just a special menu and the giant isopods were accidentally caught like the restaurant owner said, then everyone should try it if they have the chance,” said Digell Huang, 34, a genetics researcher.

“I am honored to have the opportunity to taste that special noodle dish,” she added while eating a bowl of isopod-covered noodles.

The isopod was officially recognized in Taiwan last year and there is not much data on it, said Huang Ming-chih, associate professor of biotechnology specializing in deep-sea invertebrates at Tainan University.

“The best way is to conduct more research and build a complete database of isopods before we can eat them,” Ming-chih added.
