Besides the popular chicken and beef curry dishes, you can make a variation of cauliflower, egg and potato curry to change up your daily meals.

Here is an easy to make cauliflower egg and potato curry recipe at home.
Ingredient
- Onion: one
- Red pepper: one
- Ginger: one branch
- Potatoes: 2 tubers
- Cauliflower: one plant
- Coconut milk: 400 ml
- Eggs: 6
- Seasoning: Vegetable oil, curry powder
- Coriander: a bunch
- Garlic: one bulb
Making
- Step 1: Prepare ingredients

- Wash onions, peel, dice
- Red chili, seeded and chopped
- Peel ginger, cut into small pieces the size of a finger
- Wash potatoes and cauliflower, cut into bite-sized pieces
- Boiled eggs, peeled
- Coriander, chopped garlic
- Step 2: Heat a large, deep nonstick skillet over low heat. Add the oil, add the onions and saute over medium heat for 8-10 minutes, stirring occasionally, until soft and starting to turn golden.
- Step 3: Stir the chilli, garlic and ginger into the onion mixture and continue to saute for 2 minutes. Increase the heat slightly, add the potatoes and cook for 3-4 minutes, stirring frequently until the potatoes begin to soften.
- Step 4: Add 2 tablespoons of curry powder to the pan, stir the mixture for 1 minute, then add the cauliflower and stir-fry for another minute.

- Step 5: Pour the coconut milk into the pan and stir well. Season with a little salt to taste, increase the heat and bring to a boil, stirring frequently, then cover the pan halfway and simmer. Cook the curry for 20-25 minutes, stirring frequently, until the sauce has thickened slightly and the vegetables are tender.
- Step 6: Cut the eggs in half and add them to the sauce pan, then cover and continue to simmer for another 1-2 minutes to heat the ingredients evenly.
