Mangosteen chicken salad is quite elaborate to prepare, especially the step of peeling the mangosteen to get the meat for the salad. It takes about 5kg of mangosteen to get 1kg of meat. At the beginning of the season, the price of one kilo of mangosteen meat is about 450,000 VND to 550,000 VND.

Ms. Nguyen Thi Anh Nguyet, living in Rach Gia City (Kien Giang) said that her family has only enjoyed mangosteen salad since the beginning of the season. Everyone in her family loves this dish because it tastes different. “I like mangosteen chicken salad because the chicken is naturally sweet, crispy, sweet, and slightly sour, combined with Vietnamese coriander, carrots, peanuts... stimulating the taste buds. If you want to eat it more flavorful, dip it in sweet and sour fish sauce,” Ms. Nguyet shared.

The mangosteen is soaked in salt water and diluted lemon juice to reduce the latex. Then, use a knife to peel it directly under the tap so that the latex does not stick to the blade, making it easy to wash off the latex layer of the mangosteen. After peeling, the flesh is cut into slices and soaked in ice water for about 10 minutes to increase crispness and reduce astringency. According to many housewives, using raw mangosteen will keep the beautiful flower shape when cut, and will not be crushed when mixed into salad.

To make delicious mangosteen salad, depending on each person's preference, you can use chicken or pork belly, shrimp, squid... If making chicken salad, you must choose free-range chicken, because free-range chicken is firm, sweet and soft, making the dish more flavorful.

For a richer flavor, while boiling the chicken you can add a little spice to create an attractive aroma; in addition, chicken broth can also be used to cook porridge, which is great eaten with salad.

Mangosteen chicken salad is a delicious and unique dish.

After the chicken is cooked, let it cool, then tear it into bite-sized pieces and mix with a little sweet and sour fish sauce. Shredded carrots, thinly sliced onions, fried onions, roasted peanuts, Vietnamese coriander and a few slices of chili, add a little sweet and sour fish sauce and mix well.
