Tofu and seaweed soup

Directions: Cut tofu into bite-sized pieces and steam until cooked. Chop tomatoes. Finely chop shallots and garlic. Saute shallots and garlic until fragrant, then add minced meat and stir-fry until cooked.
Next, add the tomatoes and stir-fry, then season to taste. Add the soft tofu to the minced meat and tomato mixture. Simmer until the tofu is coated with the spices.

Braised Tofu with Soy Sauce

Directions: Wash and chop green onions and cilantro. Peel, wash and chop shallots. Rinse beans in cold water and cut into bite-sized pieces.
Fry the tofu until golden brown on all sides, then remove and drain. Saute the shallots, then add the tofu and soy sauce to the pan. Add half a bowl of water, half a teaspoon of salt, sugar, and pepper and stir well until the spices are dissolved. Cover the pan and simmer the tofu for 4-5 minutes so that the tofu absorbs the spices.

Flossed beans
Ingredients include 4-5 young tofu blocks, chicken eggs, pork floss and some common spices.
How to make: Rinse the young beans in water, then cut into bite-sized pieces and place on a tray or plate.
Crack the eggs into a bowl and beat well. Finely chop the green onions and put them in a bowl, mix with a little sugar and salt (very little) - this will help the onions stay greener when added to the dish.
Tofu floss
Heat the pan then pour in enough cooking oil to cover the tofu pieces so the tofu dish will be crispy and delicious.
When the oil is boiling, reduce the heat, gently pick up each piece of tofu, dip it in the egg and drop it into the pan, about 10 seconds, remove it to a plate lined with paper towels. Repeat with the remaining tofu.
After frying the beans, pour out all the oil, keep 1/2 tablespoon of oil in the pan, then add the bowl of green onions and stir well for about 10 seconds, then turn off the heat.
Arrange the tofu on a plate, drizzle with scallion oil and then top with shredded pork floss. Or make a bowl of shrimp paste or soy sauce for dipping, and serve with perilla or basil.
Finished product: Crispy tofu with soft inside.
Stuffed tofu with tomato sauce
Ingredients: Tofu: 5 pieces, meat: 200 gr, tomatoes: 500 gr, wood ear mushrooms, green onions.
How to make: Wash and mince the meat. Choose pre-fried tofu, wash it again, cut it in half but do not cut it apart, use a spoon to scoop out some tofu and put it in the bowl of minced meat.
