The most popular sweet donuts are sugar donuts and molasses donuts, and this shop only sells those two types. After frying, the donuts are transferred to a sugar or molasses to coat the crust evenly with molasses or sugar. Sugar donuts use white sugar, while molasses donuts are made from molasses. Here, molasses donuts are a bit more popular than sugar donuts. Mr. Hung, the shop owner, is also proud that molasses donuts are the best seller: "I am famous for molasses donuts, this molasses is molasses, I get it from Son La , Moc Chau, and every time I get it, I have to get a whole truckload."

Around 7am after opening, people come to buy donuts, in the afternoon customers come to buy continuously, sometimes when there are many customers and the batch of donuts is not finished, the buyers still have to queue.

Mr. Hung, the owner of a fried cake shop on Thai Thinh Street, said: "Now it's the season, sometimes my bakery sells more than ten thousand cakes a day. Normally, in the summer, every day, it's about 5,000 - 7,000 cakes. My workers get up at 4:30 - 5:00 a.m. to make cakes. Usually, my bakery has cakes at 7:00 a.m. and sells them until 5 - 6:00 p.m. My bakery never has any unsold products. My bakery doesn't even have enough to sell."

Each donut is quite large, the size of a palm, and costs only 6,000 VND. Each person can eat 2-3 donuts and be very full. The donuts are delicious, easy to eat, and cost only a few thousand VND, so people only need to buy a few donuts. Enough for a fun afternoon snack, not filling but fun.

The mung bean filling inside the donut has a slightly salty taste that helps the donut be less sweet and boring.

It turns out that Mr. Hung, the owner of the donut shop on Thai Thinh Street, used to be a baker. For people of the 8X generation, it was a great joy to have their parents buy them a 2-tier cake decorated with flowers and colorful borders on their birthdays. Mr. Hung was the one who made the famous cakes on Tho Nhuom Street back then.

"I have a career, a career in baking. I used to make cakes on Tho Nhuom Street in the 80s, and my family was one of the first to make cakes in Hanoi," Hung confided. When traditional cakes were no longer popular, Hung switched to making fried cakes. As someone who already had a career with flour and cakes, his fried cakes sold on Hang Be Street were also loved by many people.

"I have been selling in Thai Thinh for 5-6 years. Before, I sold on Hang Be, I rented a sidewalk to sell. I couldn't rent it anymore so I moved here. At that time, my business was very popular, my father and I couldn't sell the cakes fast enough" - Mr. Hung said.

The steps to make donuts that everyone loves.

Talking about the shop with a frontage of just over 1 meter, Mr. Hung shared: "They can't rent this house because the frontage is too small, many people come to rent it and then don't rent it again after a few months. I came here by fate, I've been here for 5-6 years" . Perhaps, because it's just a takeaway food, the frontage is small but meets the needs of customers. But actually, going deeper into the house, we know that the inside is larger and is where the cakes are made. All the steps of making cakes from mixing the dough, shaping the cakes, frying the cakes, stirring the cakes with sugar and molasses... are all done in this house.

The cake is fried three times in oil to achieve the desired crispiness.

The donuts are small but making them is not easy. Mr. Hung confided that this job often requires staying up late and waking up early. The dough is also a laborious task. Before, without a machine, everyone had to make the dough by hand. With the machine, things have become easier in the past 2 years. To get the crust crispy enough, the donuts have to be fried 3 times in 3 pans of oil. The area where the donuts are fried is always as hot as an oven.

Now Mr. Hung is gradually transferring the donut shop to his son and daughter-in-law to take over. But it is not difficult to find Mr. Hung at the shop because he is always there to ensure the quality of the donuts.

The donut shop he named HK, when asked, it was known that it meant Ha and Khanh, the names of Mr. Hung's daughter and son-in-law. Interestingly, Mr. Hung's son-in-law's family also made donuts on Doi Can street. It was true that the donuts were a fateful relationship with Mr. Hung.

Donuts are a perfect afternoon treat for chilly fall days.
