* Braised gourd with balut egg
Ingredients for braised squash and eggs:
+ 1 squash
+ 6 boiled duck eggs
+ 1 handful of Malabar spinach
+ Vietnamese coriander
+ dried onion, garlic
+ 50gr ginger, chili
+ Seasoning: fish sauce, salt, MSG, cooking oil
How to make braised squash and eggs:
Step 1: Prepare the ingredients. Peel the squash, wash it, and cut it into 1cm thick slices. Peel and finely chop the shallots and garlic.
Step 2: Add oil to the pan and saute the chopped onion and garlic. Then add the squash and stir-fry until the oil is absorbed. Next, add water to cover the squash, cover and simmer for about 10 minutes until the squash is soft.
Season and add the boiled eggs and cook for about 5 more minutes, then add the Malabar spinach and cook until done.
2. Stir-fried squash and eggs
Ingredients for stir-fried squash and eggs
+ 1 young squash about 450gr
+ 2 eggs
+ Garlic, shallots, green onions, coriander
+ Cooking oil
+ Seasoning fish sauce, salt, seasoning powder.
How to make stir-fried squash and eggs:
+ Step 1: Peel the squash, wash it, then cut it into pieces or chop it lengthwise, or slice it into strips according to your preference.
Mince garlic, wash and cut green onions and coriander into pieces; slice chili. Beat eggs and add a little fish sauce, pepper and seasoning powder for flavor.
Step 2: Fry the white onion root until fragrant, then add the eggs and stir until firm and crumbly, scoop out and set aside. Next, add a little oil to the pan and fry the garlic until fragrant, add the squash and stir-fry over high heat, season with fish sauce, salt, and seasoning powder to taste. When the squash is half-cooked, add the eggs and stir well, sprinkle with herbs, stir quickly over high heat.
To make delicious stir-fried squash with eggs, you should stir-fry the ingredients separately. You should not stir-fry the squash first and then add the eggs because the squash will release water and make the dish less appealing.
3. Shrimp, egg and squash cakes
Ingredients to make shrimp, egg and squash cakes
+150gr young squash
+ 1/2 carrot
+ 2 eggs
+ Some shrimp
+ 100gr flour
How to make egg, squash and shrimp cake
Step 1: Peel the squash and carrots, clean them, then slice them into thin slices and shred them. Wash the fresh shrimp, remove the shell, remove the vein on the back, and cut the shrimp into small pieces.
Step 2: Put the prepared squash and carrots in a bowl, add salt and mix well, then rinse with water and squeeze out the water. Next, add the shrimp, beat the eggs, flour and add a little salt to taste and mix well into a thick mixture. If the mixture is too thin when mixing, you can add a little more flour.
Step 3: Heat oil in a pan, use a ladle to scoop out portions of the squash, egg and shrimp mixture and put them in the pan. Fry each side until golden brown, then flip to the other side. Do this until you run out of ingredients.
This dish is very suitable for children who are lazy to eat green vegetables. The cake is both cool and sweet from the squash combined with the fatty taste of shrimp, eggs… served with tomato sauce, very delicious.
