Located on Quan Nhan Street, near Vu Trong Phung Street, Thanh Xuan, Hanoi, there is a pho restaurant located inside an old house, but it is always crowded with customers. From 5 am when the sky is still not completely light, the restaurant opens to welcome customers and sells until 9 pm before closing.

The pho restaurant is located in an old house but is always crowded.

This pho restaurant is named after its owner, Mr. Hoang Quang Dung. Mr. Dung and his wife are the ones who built the family pho restaurant and until now, their son, Mr. Khai, continues to take over. Mr. Khai, 33 years old, confided: "Our pho restaurant has been open for about 33 years. Our family started as a small pho stall, at that time we put the food on a cyclo and then went out to the sidewalk to sell. Later, we moved here and have been selling at this place for about 15 years."

Star anise is an indispensable ingredient to create the characteristic flavor of pho.

Talking about the somewhat old but nostalgic house, Mr. Khai shared that this house is rented so it is difficult to upgrade and renovate it to make it more beautiful, so the family only made light repairs. But perhaps it is the house that makes many people feel close, like eating at home.

While talking and showing off the pot of broth filled with all kinds of beef, brisket, and flank inside, Ms. Hanh, Mr. Dung's wife, said: "My family makes pho in the traditional style of the past. Even though it's time to hand it over to my children, I still make everything myself because I'm a bit picky. When selling pho, the most important thing is that the meat must be good. Many people come to offer bad meat or flabby pork, and I refuse. I ask the supplier to pay a high price as long as the meat is good. I don't take cheap goods. Because for me, selling goods requires a conscience."

Ms. Hanh, the owner of the restaurant, admits that she is a meticulous person, so she always chooses the meat, cuts it, and does many other steps at the restaurant herself.

Until now, Ms. Hanh is still the one who directly cuts the meat, each piece is neat and tidy. "I still cut the meat myself, having been in the profession for a long time, I know how to cut each piece of meat. For example, a piece of brisket that is extremely crispy must be sliced a little thinly, but if the brisket is sliced too thin, it will lose its crispiness" - Ms. Hanh confided.

Mr. Khai shared: "My family makes it in the traditional way, basically the meat and bones are delicious. Later, when it came to my generation, we improved by adding more sea worms to make the broth more flavorful. Basically, we still learn from our parents' way of making it. My family's broth definitely has MSG, but our family uses good MSG, guaranteed, and this is also the type of spice that everyone has always used. Each type of spice plays a role in creating the delicious taste of the broth."

"I sell to customers who have been here since my parents took me to eat when I was a child, now they are in college and working, they still come back to eat here" - Ms. Hanh happily said.

"Now the prices are very high, we should have increased the prices, but we really don't dare to increase the prices. Many of the customers at the restaurant are regulars, some of them are workers. If we really can't survive, we will have to increase the prices. So this is the stage where I accept to share. We put the customers at the center" - Mr. Khai confided.
