Enjoying Quỳnh Côi fish soup

Quynh Coi fish soup is a specialty of Thai Binh province. The fish used to prepare this dish is usually freshwater perch, which is scaled, cleaned, and briefly boiled to separate the flesh and bones. The bone removal process requires skill to prevent the fish from falling apart. The fish is then sliced into pieces about 3 cm thick, marinated with spices for 30 minutes, and then simmered over low heat or lightly grilled over charcoal until the fish pieces are firm.
The fish heads and bones are simmered with pork bones, dried onions, and crushed ginger for about 7-8 hours to make the broth. Nowadays, because snakehead fish are rare, Quynh Coi fish soup is also made from catfish and carp.
Although called fish soup, this dish is usually served with white rice noodles. In summer, it's eaten with water spinach or sweet potato leaves, while in winter it's served with celery or chrysanthemum greens. In Thai Binh city, tourists can enjoy this dish at restaurants like Quan Bay and Quan Phuc Tuu, with each bowl costing between 30,000 and 40,000 VND.
