Stinky tofu is a traditional Chinese dish. Recently, this dish with a very unique name has been making waves in Ho Chi Minh City.
Although it is only located in a small corner of Nguyen Thien Thuat apartment building, District 3, La Phuc Khang's stinky tofu cart attracts hundreds of people every afternoon to line up and enjoy.
“At first, I only sold 20 portions a day but it was not enough, I could only sell 7-10 portions at most. After people knew and supported me, I increased the number of portions to 50 portions a day but it was not fixed, some days it was 40, some days it was 50” - Phuc Khang shared.
The daily menu of the stinky tofu cart is quite simple, including: traditional stinky tofu served with the owner's special recipe, stinky tofu shaken with Xinjiang salt, and stinky tofu specially imported from China. All are priced at 25,000 VND/portion.
“The recipe for stinky tofu and the dipping sauce is not passed down from generation to generation. I learned it myself from the Chinese way of eating stinky tofu and added many different spices to enhance the aroma,” said the owner of the La family’s stinky tofu restaurant.
Previously, the owner of the Stinky Tofu cart, La family, graduated with a degree in Psychology and worked for 4 years before deciding to quit his job selling stinky tofu.
Phuc Khang said that stinky tofu was associated with his childhood when he watched Chinese movies and was very curious about its taste. In 2022, he enjoyed stinky tofu for the first time in China and decided to bring this dish back to Vietnam, preparing it according to his own recipe.
The owner of the La family's Stinky Tofu cart graduated with a degree in Psychology and worked for 4 years before deciding to quit his job and sell stinky tofu.
Phuc Khang said that it is very difficult to find fermented bean curd in Vietnam, so he had to ask an acquaintance in China to transport the goods back.
Phuc Khang hatched the plan for 6 months and ate stinky tofu every day for 2 months before having the complete recipe and officially selling it.
To sell stinky tofu, the most important thing is to handle the smell so as not to affect the people around.
After being fried until golden brown, the stinky tofu pieces will be drained of oil, giving off a very distinctive stinky smell. When you take a bite, the crispy taste of the fried layer, the rich, fatty taste and the fermented taste of the tofu blend into your mouth, along with a little bit of spicy chili, making this dish attractive to many food lovers.
The stinky tofu cart sells from Monday to Sunday and closes on Fridays at Nguyen Thien Thuat Apartment (District 3).
"Sales start at 4:30 p.m. and the latest is 5 p.m. During the week, I sell 40-50 portions, a little more on weekends, and I will announce any unexpected holidays," Phuc Khang said.
