High uric acid should not eat nem chua
Nem chua has long been known as a rustic dish of the Vietnamese people. This is also one of the favorite drinking dishes chosen by many people. Nem is made from ground pork, pork skin, Polyscias fruticosa leaves... through a natural fermentation process to create a unique flavor.
The nutritional content of 100g of nem chua (about 5 pieces) includes 137 calories, 3.7g of fat, 4.3g of starch, 21.7g of protein, 24mg of calcium, 78mg of phosphorus, 68g of water, 2.3g of ash... In addition to nutritional value, nem chua also provides beneficial microorganisms (lactic bacteria) that help enhance immune function, inhibit some intestinal diseases and stimulate digestion.
Although popular, this is an unhealthy dish. Nem chua is fermented from raw meat without heat treatment, so it can contain many harmful bacteria such as E. coli, Salmonella, Listeria monocytogenes,... Eating nem chua regularly or using nem of unknown origin will create conditions for these harmful bacteria to enter the body, leading to symptoms of food poisoning such as: diarrhea, vomiting, abdominal pain, fever,...
In particular, nem chua is also one of the foods that gout patients and people with high uric acid should limit their use. The reason is because the purine content in nem is relatively high, going through the fermentation process causes the nutrients to change. Eating nem chua too much or too often can lead to increased uric acid, causing pain and discomfort.
Sausages are not safe for people with high uric acid.
Sausage is a type of food made from meat (usually pork) by stuffing (stuffing meat into a skin) combined with other ingredients such as salt, spices, additives, etc. This is also one of the most popular dishes because of its convenience, quick preparation and affordable price.
According to Eat This Not That, the habit of regularly consuming sausages can have a negative impact on your health. In fact, a study published in the scientific journal Nature by the University of Michigan showed that eating just one sausage can take away 36 minutes of your life, even if you are following a healthy lifestyle.
This study also shows that cooking processed meat at high temperatures such as grilling, frying... can increase the risk of cancer by stimulating the formation of heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs). These dangerous chemicals are linked to breast, pancreatic, colon and many other cancers.
In particular, sausages are in the group of foods that are unsafe for people with high uric acid in the blood. According to research, the amount of purine in 100g of sausage ranges from 150 to 200mg depending on the ingredients (chicken, beef, pork...). Eating too much sausage or too often for people with gout can increase uric acid levels, increase symptoms of the disease, and cause pain and discomfort.
