As for packaged eggs purchased at supermarkets, these are usually pre-processed eggs that have been cleaned, sterilized, and packaged. According to food science experts, this process can inadvertently remove the natural protective membrane on the outside of the eggshell.

At this time, the small pores on the eggshell are easily exposed to the outside environment, creating conditions for Salmonella bacteria to enter. Therefore, these eggs should be stored in the refrigerator immediately after purchase to maintain freshness and limit bacterial growth.

With eggs sold loose in traditional markets, most have not undergone industrial washing and therefore still retain their natural protective membrane. If the living space is cool and well-ventilated, people can store eggs at room temperature for a short period of time.

However, on hot and humid summer days, the temperature in the kitchen often rises above 25°C. Under these conditions, egg yolks easily become mushy and create a favorable environment for microorganisms to thrive. Therefore, proactively storing eggs in the refrigerator early is still the safest solution.

For unwashed eggs, if you are concerned about hygiene, only wash them right before cooking. Washed eggs should be cooked and consumed immediately; they should not be refrigerated.
