Sliced ​​zucchini

- 150g (1 cup) white flour, sifted

- 375g zucchini, shredded, squeeze out excess water

- 1 large onion, chopped

- 200g bacon, chopped

- 1 cup shredded cheddar cheese

- 60ml (1/4 cup) vegetable oil

Processing:

Preheat oven to 170 o C convection.

Beat the eggs in a large bowl until blended. Add the flour and beat until smooth, then add the zucchini, onion, bacon, cheese and oil and stir to combine.

Grease and line a 30x20cm pan with baking paper. Pour into prepared pan and bake in oven for 30 minutes or until cooked.

After taking the mold containing the cooked zucchini out, cut it into bite-sized pieces and decorate it on a plate.

This dish has a very rich flavor. Not only that, the ingredients, from eggs, zucchini, bacon, cheese... create a dish rich in protein and other nutrients, enough to provide for family members.

Tip: If you want to get the best results with this recipe, squeeze the zucchini very well, this way the final product won't be too wet or too mushy, and the zucchini will look better when sliced.

While sliced ​​zucchini will keep in the fridge for up to 4 days, in my experience it rarely lasts overnight if someone in the house is hungry! If you have leftovers, refrigerate overnight for breakfast.

You can keep it in an airtight container in the freezer for up to 3 months. When you want to use it, you can defrost it in the refrigerator overnight.
