- 5 eggs
- 150g (1 cup) white flour, sifted
- 375g zucchini, shredded, squeeze out excess water
- 1 large onion, chopped
- 200g bacon, chopped
- 1 cup shredded cheddar cheese
- 60ml (1/4 cup) vegetable oil
Processing:
Preheat oven to 170 o C convection.
Beat the eggs in a large bowl until blended. Add the flour and beat until smooth, then add the zucchini, onion, bacon, cheese and oil and stir to combine.
Grease and line a 30x20cm pan with baking paper. Pour into prepared pan and bake in oven for 30 minutes or until cooked.
After taking the mold containing the cooked zucchini out, cut it into bite-sized pieces and decorate it on a plate.
