The fish sauce is delicious, soft, not too salty but has the toughness of the fish fibers that stimulates the taste buds.

Rumor has it that in the past, in the Bac Lieu and Chau Doc (An Giang) areas, goby fish would come up the river. In Bac Lieu, just by swinging a net, the goby fish would be caught in the net, and the net would have to be brought home and hung up to remove the fish.

In Chau Doc ( An Giang ), just use fragrant bait to attract fish, they will gather and shake their heads back and forth, their whiskers sticking out of the water.

People use three fingers to quickly grab them and bring them onto the boat, sometimes catching two or three at a time. Just one hour of catching goby fish is enough to make a small jar of fish sauce.

Soak the caught goby in cold water for about two hours, then shake it, cut off the two prongs at the head, remove the intestines, wash it, leave it outside to dry in the sun, then marinate it with salt. Salting goby is especially done with roasted salt to stop it from popping.

Fish sauce is easy to eat after Tet.

For every 1kg of fish, add 1 cup of rice wine, 1/2 cup of sugar, 1 cup of rice bran, 1 spoon of roasted salt. Mix well, put in a jar, seal tightly, let it ferment, after 7-10 days it is ready to use.
