When buying chicken feet, choose those with a natural pinkish-white color and red bones. Select feet that are not slimy or damp to the touch, feel firm when held, and have taut, elastic skin. Avoid choosing feet that are excessively plump, swollen, have wrinkled skin, or are uniform in size, as these may have been injected with water. Also, avoid buying feet with deformities, lumps, blood clots, or bruises.
When buying Vietnamese coriander, choose fresh coriander with small leaves, a characteristic aroma, and free from wilting or strange odors. Avoid buying coriander with large, glossy leaves as they are less fragrant and not as tasty as those with smaller leaves.
Ingredient
- Chicken feet 500g;
- 1 bunch of Vietnamese coriander; 1 shallot; 2 cloves of garlic; a little common seasoning (sugar/salt/pepper/seasoning powder).
Preparation method:
Wash the chicken feet thoroughly, trim the claws, and drain. Peel and finely chop the onion and garlic. Marinate 500g of chicken feet with 1 teaspoon of sugar, 1 teaspoon of salt, 1 teaspoon of seasoning powder, and 1/2 teaspoon of ground pepper. Then add the chopped onion and garlic and marinate together. Use gloves to mix well so the chicken feet absorb the seasoning better, and let it marinate for 15 minutes.
While marinating the chicken feet, prepare the Vietnamese coriander. Wash the coriander thoroughly, drain, then pick each leaf, discarding any overly old or wilted leaves.
Place the chicken feet in a steamer and steam for 10 minutes over high heat. Then, open the lid and turn the chicken feet so they cook evenly. Next, add the prepared coriander leaves on top of the chicken feet and steam for another 15 minutes.
