Rich in flavor, Hon Son garlic chicken

Before tourism developed, people in Hon Son, Kien Hai district (Kien Giang) lived mainly by fishing. People living near the top of Ma Thien Lanh mountain mainly used the land to grow trees and raise chickens for sale. When Hon Son tourism became popular, people opened restaurants to serve tourists. The coastal area served fresh seafood, while on the mountain there were dishes such as chicken in water, steamed chicken, chicken hotpot... especially garlic fried chicken that attracted tourists.

Hon Son garlic fried chicken and young banana salad attract diners from near and far.

According to locals, Hon Son garlic chicken is made from free-range chicken, with firm, sweet meat, marinated with rich spices. The chickens raised on the mountain weigh from 1.5-2kg, and mainly eat grass and insects.

According to many local chefs, each person has their own secret to marinating chicken. The chicken is cleaned, marinated with garlic and fish sauce, then put in a pot, add coconut water and cover and cook over low heat. After about 20 minutes, the water will gradually dry up, use chopsticks to skewer the chicken to check the doneness. When the chicken is cooked, the chef adds the sauce and cooks until it thickens, seasoning and turning off the stove.

The chicken is arranged on a plate, next to it is a plate of young banana salad mixed with fragrant coriander, diners can use scissors to cut or tear it by hand and then dip it in sweet and sour fish sauce. The pure white meat and golden skin blend together with the slightly astringent, sour taste of young banana salad and the salty, sweet taste of fish sauce, the spicy taste of chili... creating a rich flavor of the dish.

“This is the first time I have tasted garlic chicken. This dish is delicious, the chicken is fragrant, sweet, and chewier than other places. The chicken is delicious with young banana salad, not boring,” said Ms. Quach Kim Loan, a resident of Ca Mau province.
