I have been in Nha Trang for more than ten years now but I have never given up my favorite dish, Nha Trang jellyfish vermicelli, with its delicious, coastal flavor.
As the name of the dish suggests, Nha Trang jellyfish noodle soup is characterized by two types of seafood: fish and jellyfish. Of which, jellyfish is a typical dish of the coastal region. Not everyone is familiar with jellyfish, so very few people dare to "risk" using it. Even the most knowledgeable people sometimes make mistakes because they buy the type of jellyfish that is very salty and cannot be eaten. There are other types of jellyfish that, if eaten, can cause allergies, itching, etc.

However, when coming to Nha Trang, the locals here know how to choose the best jellyfish, sweet, cool and crispy when enjoyed. Because it is a coastal area, the jellyfish here is fresh, juicy, and not dry when eaten. Jellyfish in Nha Trang has clear meat, when the weather starts to get hot, jellyfish is a delicious, nutritious, cool dish with high heat-relieving properties.
Speaking of fish, the types of fish commonly used for jellyfish vermicelli are mackerel, tuna, sailfish, and barracuda. Mackerel and barracuda are often used to make steamed fish cakes and fried fish cakes. After removing the bones, the fish meat is ground and shaped into balls. Then it is steamed to preserve the flavor.
The other two types of fish, sailfish and tuna, have quite large bones and will be used to make broth. The broth is not made from meat or marrow bones but from fish bones. The fish meat will be filleted separately to serve with noodles.

One thing that cannot be missed to make the jellyfish noodle soup flavorful is the dipping sauce. It must be done correctly to have the right dipping sauce, including a mixture of shrimp paste, sweet chili, hot chili, then squeeze in lemon juice. If you like salty food, you can add fish sauce, if you can't eat spicy food, you can leave out the hot chili.
A hot bowl of noodles will be served with a plate of raw vegetables. Dipping the vegetables into the bowl of noodles will make the broth cool down to a more suitable taste. Raw vegetables are milder when hot, and are delicious when eaten with jellyfish.
A proper dipping sauce includes shrimp paste, sweet chili, spicy chili and fresh lemon.

Nhat Vy, the owner's daughter, said that her family has been cooking Nha Trang jellyfish noodle soup for over 43 years. What customers love about the restaurant is that the fish is always fresh and not fishy. Most of the fish is brought in by a familiar supplier at 4am, right after being caught from the sea. The family always puts freshness first when importing fish to make quality dishes.
