Below is a simple way to make boat cakes carrying seeds shared by Ms. Hue.
Prepare ingredients:
- 50g white sugar
- 50g corn syrup
- 10g coconut milk (or whipping cream)
- 56g unsalted butter
- 100g sliced almonds
- 100g other nuts of your choice
- 30 boat cake bases
Steps to follow
1. Roast the seeds
Roasting the nuts helps to enhance the aroma and flavor, which is an important step in creating the deliciousness of the cake. To ensure that the nuts are cooked evenly and stay crispy for a long time, you need to roast each type of nut separately, because their sizes are often different.
2. Make caramel sauce
- Add sugar and a little water to a pot, heat over medium heat. When the mixture boils, shake the pot gently, do not stir with a spoon. Then reduce heat to low and cook until the mixture turns light brown.
- Continue adding unsalted butter, corn syrup and coconut milk, stir the mixture over low heat to blend the ingredients, about 2 minutes then turn off the heat.
Note: If you want to enhance the flavor, you can add a little salt after turning off the stove.
3. Create boat shape
- Mix the roasted nuts with the caramel sauce, making sure the nuts are evenly coated with caramel.
- When the mixture cools down, use a spoon or plastic gloves to spread a sufficient amount of filling onto the surface of the boat cake.
Note: Do not spill the filling out to keep the cake in a beautiful shape.
4. Baking
- Place the cake in the air fryer, bake at 155-160⁰C for about 15 minutes.
- If you want the cake to be crispier and last longer, you can dry the cake at 80-90⁰C for 20 minutes.
