Having been selling bread for nearly 30 years and being one of the first shops selling pate bread here, Ms. Bui Thi Nga, owner of a Do Quan pate bread shop, said that in the beginning, the customers were mainly students and workers in the area.
Later, Do Quan pate sandwich became more and more known and loved by many people, the number of customers increased day by day, and since then the dish has become a famous specialty.
The 'soul' of Do Quan pate sandwich is the soft, fatty pate filling combined with crispy fried onions. Ms. Nga said that to make a delicious batch of pate, you must first choose fresh, clean ingredients.
“Every day, I go to slaughterhouses early in the morning to buy liver, pork, lard, etc. to process. After being cleaned, the ingredients are marinated with spices and a thick layer of sliced lard is spread on top to increase the fattiness of the pate, then steamed for at least 10 hours,” Ms. Nga shared.
After being steamed for enough time, pate will have a characteristic aroma and melt in your mouth.
The special thing is that the pate here is always kept hot when preparing for customers. The bread crust is also baked in an oven to make the outer layer crispy, when eaten, it is combined with herbs and sour green papaya pickles to help balance the taste of the pate.
In addition to pate, the sandwich shops here also sell many other 'toppings' such as char siu, eggs, dried shrimp... to give customers more options. These 'toppings' can be eaten alone or combined with pate, drizzled with the shop's signature thick sauce to create a very attractive flavor.
Not only attracting customers with its delicious pate filling, the side dish of green papaya pickles, pickled in a sour and crunchy texture, is also very popular with diners and contributes to the success of this dish.

According to Ms. Nga, the number of customers coming to eat at the restaurant is very large every day. Many diners from far away come here to buy cakes to eat or bring as gifts. On average, her restaurant sells thousands of cakes every day, and the number of sales is even higher during holidays.
“When we see a long queue of customers, we always pay attention and try to work quickly to save customers' waiting time,” said Ms. Nga.
According to long-time diners here, buying Do Quan pate sandwiches during rush hour in the evening will definitely mean having to wait in line, but they are not bothered by this.
The restaurant is crowded on weekdays, and even more so on weekends and holidays. There is no room inside the restaurant, and take-out customers sometimes have to wait an hour for their turn.
