Fresh shrimp stir-fried with star fruit - a rustic childhood dish
There is a delicious dish that just by seeing it or hearing someone mention its name, my heart beats with a memory of my childhood. That is, the delicious dish of stir-fried shrimp with sour star fruit .
When I was a child, on hot days, my mother would go to the market and select small shrimps by the ounce - fresh ones with clear bodies and slightly curved tails. Then, she would buy some sour green star fruit, so sour that you would grimace after taking a bite.
When she got home, my mother washed the shrimp very carefully, filtered out the sand and gravel, then poured it into a basket and let it drain. She cut the star fruit into slices of moderate thickness, keeping the wings intact, so that they wouldn't be crushed when cooked. She placed the black cast iron pan on the stove, and spread a spoonful of cooking oil on the bottom. When the fried onions were fragrant and golden brown, she added the shrimp and stir-fried them evenly. When the whole kitchen was filled with the salty smell of the sea, the sourness of the sun and wind, and the sweetness of love, my mother added a little fish sauce and ground pepper, stirred well, and poured them onto a plate.
The simple dish of sour star fruit fried shrimp with red amaranth soup and a bowl of pickled eggplant made my brothers and I eat three bowls of rice in a row. The sour taste of star fruit mixed with the sweetness of shrimp made the bowl of white rice delicious, and no delicacy could replace the delicious summer dish that my mother had when I was a child.

In the countryside, shrimp is called "tom riu". First of all, you need to choose fresh shrimp with a clear body, no strange smell, slightly curled tail, and firm to the touch to make a delicious dish.
Avoid buying soft-bodied shrimp with a strong smell and a stretched back because they may have been chemically treated. This type, when fried, will become mushy, will not absorb the seasoning, will lose its natural sweetness and will no longer be delicious.
