Braised pork roll (stir-fried pork roll) is one of the most popular fried dishes in our country during Tet. Ingredients for fried pork roll (for 4 people)

Below are the ingredients for making fried ham, you need to prepare:

Lean pork leg: 200 grams

Pork tongue: 200 grams

Pig ears: 150 grams

Pig nose: 150 grams

Black fungus: 200 grams

Onion and garlic juice: 2 tablespoons

Crushed black pepper: 1 tablespoon

Banana leaves: 1 kg

String and plastic bag: 1 little

How to choose fresh ingredients

 

Pig ears: choose ears with natural pink color, not black, gray or pale, no swelling, redness or other unusual signs.

Pig nose: should also be bright pink, without pale color or signs of mold.

Pork: Choose pork that is deep pink in color, not gray, pale, or other unnatural colors.

How to make fried ham

Prepare ingredients for making fried ham

Clean the pig's ears and nose of hair, wash the pig's feet with water several times until clean, then drain. Also wash the pig's tongue, blanch it in boiling water mixed with a little white wine, then take it out, wash it again, and drain.

Soak the wood ear mushrooms in warm water until they expand, drain, cut into small pieces, marinate with minced onion and garlic, ½ teaspoon seasoning powder and 1 teaspoon pepper.

Boil meat

 

Bring a large pot of water to a boil, add all the meat and cook until about 80% done. Remove the meat and rinse immediately with cold water and drain. Next, cut the meat into large, thin slices.

Stir-fry meat

 

Heat the pan and 2 tablespoons of cooking oil, add the meat and stir-fry for 2 minutes. Season the pan with 1/2 tablespoon of salt, 1 tablespoon of ground pepper, 1 tablespoon of minced onion and garlic juice, 1 tablespoon of coarsely ground pepper, 1 tablespoon of fish sauce and ½ tablespoon of seasoning powder.

Stir until the meat is slightly firm, then add the mushrooms and stir-fry for another 3 minutes. When the mushrooms are fully cooked, turn off the heat.

Fried pork roll

 

Spread banana leaves on a tray, put the meat in a plastic bag, wrap it up and tie it tightly with string. Then, let the pork roll cool completely before putting it in the refrigerator to freeze.

 

When serving, cut the fried pork roll into bite-sized pieces. To enhance the flavor, you can serve the pork roll with soy sauce or chili sauce for dipping.

A qualified brawn will have a slightly pink color, the color of the fat mixed with the brown color of the mushrooms. The brawn will taste crispy, sweet, fatty, and fragrant with the smell of meat as well as mushrooms and pepper.
