1. Ingredients for steamed squid with ginger

Fresh squid: 1kg
Ginger: 2 roots
Lemongrass: 5 stalks
Green onion: 5 stalks
Lemon: 3 fruits
Garlic: 1 bulb
Chili: 5 fruits
Lemon leaves: 3 leaves
Spices: Salt, seasoning powder, fish sauce, sugar

2. How to make steamed squid with ginger

Step 1 : Prepare ingredients

Peel 2 ginger roots and wash them. Slice 1 root into thin strips and set aside. Use the other root to remove the fishy smell of squid and mix the dipping sauce.

Peel garlic and set aside.

Wash and chop chili.

Lemongrass, remove old leaves, cut into 5cm pieces, crush and chop finely.

Wash and chop green onions.

Step 2 : Clean and remove the fishy smell of the squid

First, firmly grasp the squid's tentacles and gently pull the white spine out of the squid's body.

Step 4 : Steam the squid

Use a deep ceramic plate to add the crushed lemongrass, shredded ginger, chili, chopped green onions and marinated squid and mix well.

Place the steamer on the stove, add water, place the steaming tray on top and then place the squid plate in to steam for about 10-15 minutes.

Steamed squid is ivory white when cooked. If the squid is left whole and the membrane is not peeled off, the outside will be reddish brown and the inside will be milky white. Undercooked squid is opaque white, has a fishy taste and is not crispy.

Step 5 : Mix ginger fish sauce to serve with

While waiting for the squid to marinate, crush a little ginger and 2 chili peppers until smooth, then mix in 3 tablespoons of fish sauce and 2 tablespoons of sugar, stir well with a spoon until the sugar dissolves. Next, add a little lemon and season to taste.

Step 6: Finish

After turning off the stove, do not open the lid immediately, but leave it alone to let the squid absorb all the aroma of ginger.
