Water spinach: 0.5kg
1 bunch of water spinach, 1 bunch of water mimosa, 200g of bean sprouts, 300g of shredded banana flower.
1 handful of hibiscus leaves, or can be replaced with tamarind.

Raw material preparation
Choosing to buy live goby fish and cleaning them while keeping them alive is the most important step to have a delicious goby fish hotpot. To clean the goby fish slime and reduce the fishy smell, you have many ways. Salt, vinegar, and lemon are effective supporting ingredients.
You can use salt and vinegar mixed together and rub it on the goby fish many times until the slime is gone, then rinse with water. Or you can use ash in a pot or basin, put the goby fish in it, rub it to remove the slime, then rinse with cold water.

Many people also use fresh banana leaves, crush them and rub them many times on the fish body, then rinse with water.
You also pick the vegetables to eat with, wash them thoroughly and soak them in salt, then take them out and drain. As for the banana flowers, wash them and soak them separately in diluted salt water with lemon juice to prevent them from turning black.
Wash tomatoes, cut into wedges. Wash hibiscus leaves and green onions. Peel, crush and chop onions and garlic.
Cook snakehead fish hotpot
There are many ways to cook snakehead fish hotpot. You can use pork bones to increase the sweetness and fat of the hotpot broth. You can also skip the bone stew and just saute onions and garlic, add sorrel leaves and tomatoes, then cook normally, season to taste.
If using pork bones, wash the bones and put them on the stove to simmer for about 30-40 minutes to get the sweet broth. Remember to keep the heat low while simmering the bones.

Place another pot on the stove, add a little cooking oil to sauté the onions and garlic. When the onions and garlic are golden brown, chop 1 tomato and add it to stir-fry to make the hot pot broth more beautiful. Then add the bone broth, you can add enough water to serve the number of people and bring to a boil.
When the water boils, crush the giang leaves and add them. If you don't have giang leaves, you can replace them with ripe tamarinds. Add 2 tomatoes and sliced pineapple. Season with fish sauce, salt, sugar, and MSG to taste. When the water boils again, ladle the hot pot broth into the pot, add fresh chili, lemon, coriander, and Vietnamese coriander, then put it on the stove. Pure fish sauce, side dishes, and fresh noodles are ready.
When the hot pot water boils again, you put the goby fish in. Because the fish is still alive, you have to put it in the boiling water carefully so that the boiling water does not splash around. It is best to put the fish in a bucket of ice, the fish will be stiff all over, making it easier for you to put it in the hot pot.
