Ingredients for making pork skin salad with roasted rice powder:
+ 500g pork skin
+ 100g of roasted rice powder
+ Lime leaves, chili powder, garlic
+ Seasonings: fish sauce, sugar, vinegar, pepper, chili sauce, soup powder
How to make pork skin salad with roasted rice powder:
Step 1: Wash the pork skin thoroughly with salt, blanch it briefly, then remove and rinse again with clean water, and let it drain. Next, separate the fat and skin. Crush or grind the garlic, chili, and pepper; finely chop the lime leaves.

Step 2: Separate the fat and fry it to make cracklings. Boil the pork skin a second time with a little ginger, dried onion, white wine, and salt for flavor. Then, remove from the water, let cool, and slice into thin strips.
Step 3: Mix the pork skin with the fried pork cracklings, add sugar, vinegar, and seasoning powder, and mix well. Then, refrigerate for about 30 minutes to allow the pork skin to firm up, making it tastier.
Step 4: Prepare the rice powder by roasting the rice, glutinous rice, and peeled mung beans until golden brown, letting them cool, and then grinding them into a fine powder. Alternatively, you can buy ready-made rice powder.
Step 5: Prepare the dressing by mixing 1 tablespoon of sugar, 1/2 tablespoon of vinegar, and 1/4 tablespoon of chili sauce. Stir well, add a little water, fish sauce, garlic, and chili peppers, and adjust the sweet, sour, salty, and sour taste to your liking. Mix with the pork skin, marinate for another 30 minutes, then sprinkle with roasted rice powder and lime leaves before serving.

Ingredients for pork skin in tomato sauce:
+ 500g pork skin
+ 2 tomatoes
+ Green onions, fresh chili peppers
+ Seasonings: fish sauce, MSG, pepper
How to make pork skin in tomato sauce
Step 1: Choose fresh pork skin, selecting a moderately thick and clean cut. Soak it in rice water or wash it with water and a little lemon juice to reduce the odor. Then, blanch it briefly, adding some fresh ginger to further remove the odor and make it easier to slice.
After removing them from the water, let them cool, then slice them into bite-sized pieces. Wash the tomatoes and cut them into wedges.
Step 2:
Put the pork skin in a pot and stir-fry it with fish sauce, salt, tomatoes, and chili peppers until it absorbs the flavors. Then add a little water and bring to a boil. When the pork skin is cooked through, it's ready to eat. Remove from the heat and sprinkle with chopped scallions and pepper for aroma.
This dish is delicious and unique when eaten with hot rice. The pork skin is chewy and fragrant, and the tomato sauce is rich and aromatic.
