2. How to cook delicious chicken hot pot with basil leaves
Step 1: Prepare the ingredients

Cut off the base of the basil leaves, pick out the fresh, green young leaves, and discard the old or damaged ones. Then, wash the basil leaves thoroughly and drain them in a colander.
Rinse the pickled bamboo shoots briefly with cold water to remove any dirt, then cut them into bite-sized pieces and place them on a plate.
Peel and wash the garlic and shallots.
Clean the chicken, rinse it, gut it, and remove the internal organs. Be sure to remove the oil glands at the tail of the chicken, as these are the cause of the unpleasant odor in chicken meat.
Cut a lemon in half and rub it all over the chicken, then rinse thoroughly with cold water. Use a knife to chop the chicken into bite-sized pieces.
Step 2 : Crush the basil leaves.
Add half of the washed basil leaves to the mortar along with 1 clove of garlic, 3 peeled shallots, 2 chili peppers. Use a mortar and pestle to crush the basil leaves, shallots, and garlic until finely minced, then mix them together.
The remaining basil leaves can be added to the hot pot when you're ready to eat.
Step 3 : Marinate the chicken
Place the prepared chicken in a large pot along with the perilla leaves and crushed onions and garlic. Mix well so that the perilla leaves coat the chicken evenly.
Add 1 teaspoon of salt, 1 tablespoon of seasoning powder, 1 tablespoon of fish sauce, 1 tablespoon of sugar, and a pinch of ground pepper.
Finally, stir well to mix all the ingredients together. Marinate the chicken for at least 30 minutes to allow the meat to absorb the flavors evenly.
Step 4 : Cook the chicken hot pot with basil leaves.
Place a pot on the stove and add 2 tablespoons of cooking oil. When the oil is hot, add the marinated chicken and stir-fry over high heat.
Once the chicken is cooked through, add 2 liters of water to the pot, season with 1 tablespoon of fish sauce, 1 tablespoon of sugar, 1 teaspoon of MSG, and 1 teaspoon of seasoning powder. Then, stir well until the seasonings dissolve in the water.
Continue cooking over high heat until the broth boils, then reduce the heat to medium and simmer for another 15-20 minutes until the chicken is tender. Finally, adjust the seasoning to taste and the dish is complete.

Step 5 : Enjoy
When serving, bring to a boil again, then add the bamboo shoots and fresh basil leaves and wait another 2 minutes before enjoying. Chicken hot pot with basil leaves is delicious served with fresh rice noodles.
Chicken hot pot with basil leaves has a rich, sweet broth thanks to the chicken meat, and the gentle aroma of basil leaves blends with the fragrant sour bamboo shoots, making it very appealing.
3. Notes when cooking chicken hot pot with basil leaves
To cook authentic chicken hot pot with basil leaves, you need to know how to choose fresh, high-quality chicken meat.
Good quality chicken has a golden-yellow skin that is thin, smooth to the touch, not too rough, and has good elasticity. The meat inside should be a natural pinkish-red color, neither too pale nor too dark.
If buying pre-processed and packaged chicken, carefully check the expiration date and packaging date, and ensure that the bag openings are intact.
Free-range chickens raised on hillsides are the best choice because their meat is firm, sweet, and flavorful.
If possible, skim off some of the chicken fat before cooking. Or, more simply, after marinating, you can lightly fry the fatty parts of the chicken to remove excess fat. This will make the chicken meat much more flavorful and delicious.
When buying basil leaves, choose those that are green, fresh, firm, and intact. Avoid buying basil leaves that are wilted, damaged, broken, or torn.
During consumption, if the basil leaves are left to steep for too long, they will become discolored and lose their distinctive flavor.
When eating hot pot, adjust the amount of chili peppers to suit your taste. You can also add rice noodles and other dipping ingredients. Other side dishes.
Above is the simplest way to cook chicken hot pot with basil leaves at home. Please try making this delicious and nutritious dish for your family to enjoy.
