Prepare
1 grapefruit (can be green-skinned grapefruit, five-fruit grapefruit...), 200 ml boiling water, 300g tapioca starch, 100g sugar. You should choose grapefruit that is neither too young nor too old, light but large will give a lot of pulp. Because young grapefruit will have a lot of essential oils, the peel is bitter, while old grapefruit is too fibrous and not tasty. Then filter the grapefruit pulp and cut the pulp into cubes.

Making
Boil a pot of water, put the grapefruit pulp in and soak for 10 minutes, then take it out and let it cool down, then squeeze out the water. If the pulp deflates and does not swell up again, it is okay. If it still swells up, continue squeezing 1-2 more times until the pulp is completely dry.

Next, take the grapefruit pulp out and rinse it with cold water, soak it in cold water for another 5 minutes, then squeeze out the water, repeat this action 2 times until the grapefruit pulp is completely dry. Taste it and see if the pulp has no bitter taste.
Heat the pan on the stove, add 50g of sugar and let it melt, then add a little water and cook until the sugar turns caramel color, then reduce the heat, continue to add 50g of sugar and 120ml of water, bring to a boil. Then turn off the stove, wait until the sugar water is still warm, then add 100g of tapioca starch and stir well.
Next, pour in all the prepared grapefruit pulp. Use a spoon to stir well so that the tapioca starch is absorbed into the pulp.
Add 200g of tapioca starch to a plastic box or large bowl, then pour in all the grapefruit pulp and shake well so that the flour sticks evenly to the grapefruit pulp. Continue to put the grapefruit pulp in a pot of boiling water and boil until the grapefruit pulp is clear.
