To make delicious mung bean sweet soup, meticulous care is required from the very beginning, starting with the selection of mung beans. The mung beans used must be of high quality, plump, and uniform in size, thoroughly washed to remove dirt and impurities. The process involves many steps: soaking, hulling, steaming, mashing, and molding. The beans are soaked in cold water for at least 6-8 hours with a little salt, or overnight, to allow them to swell and soften before cooking. Next, the beans are hulled, any damaged beans are removed, and they are mixed with sugar. The sugar-to-bean ratio is a secret, ensuring the soup isn't too sweet, can be stored for a long time without molding; mashing the beans also requires careful attention to the heat and constant stirring to avoid burning, which would cause a burnt smell and ruin the beautiful golden color.

To ensure food safety and hygiene, Bang An's braised tea is produced in a closed, one-way area, according to ISO 22.000:2018 standards, and with investment in modern machinery. The finished product is vacuum-sealed. The braised tea can be stored for about 10 days in cold weather, and 3-4 days in hot weather. If stored in the refrigerator, and if you want to eat it hot and have a microwave, remove the foil before serving and microwave for about 2 minutes to restore its freshness.
