To learn about this unique salt and pepper chicken dish, we went to the production facility of Hong Xiem restaurant, No. 2A, Phai Ve Street, Dong Kinh Ward, Lang Son City, owned by Ms. Nguyen Thi Hong Xiem.
While preparing the ingredients, Ms. Nguyen Thi Hong Xiem shared: With a passion for cooking and wanting to make delicious, quality food by myself, in 2023, I learned how to make salt-cured chicken from a famous chef in Hanoi and tried to find my own recipe to make my own salt-cured chicken dish. Coming to Lang Son, in addition to the specialties of roast duck and roast pork, free-range chicken can also be considered a quality ingredient. With the desire for many consumers to know about the salt-cured chicken dish with its own unique flavor of Lang Son, when I successfully researched this dish, I decided to bring it to the market and develop it.
Through the research process, Ms. Xiem added star anise to the meat marinade recipe, giving her product its own unique flavor.
To make delicious, flavorful salt-cured chicken, the facility selects firm chickens with a high lean meat ratio. After cleaning, the chicken is marinated with more than 30 spices, including red salt, star anise, pepper, cardamom, fresh turmeric... To create a beautiful yellow color, the chicken is "bathed" in turmeric water, wild honey... Next, pepper is measured in moderation and stuffed into the chicken's belly to make the dish more flavorful. After that, the chicken is steamed over medium heat for about 50 minutes, this step helps the chicken absorb the spices evenly.
Another special thing about the salted chicken dish is that the chicken dipping sauce is an indispensable ingredient that creates a delicious chicken dish. The establishment also shares how to make the dipping sauce, which includes a mixture of vinegar, sugar, salt, seasoning powder, pepper, crushed fresh chili, condensed milk... mixed well, creating a unique dipping dish from color to unforgettable flavor.
When enjoying, customers will clearly feel the natural sweetness of the chicken, mixed with the spicy pepper flavor without overpowering the aroma of the chicken. This is also the difference that makes Ms. Xiem's salt-cured chicken taste different from salt-cured chicken in other places.

In particular, the salt and pepper chicken of Hong Xiem facility has a very unique flavor, firm chicken meat, crispy golden skin, delicious dipping sauce with rich herbal flavor, not mixed with any other dipping sauce, every time I come to Lang Son I enjoy this dish and buy it as a gift.
Currently, a salted chicken is sold for 280,000 VND, weighing from 1.4 to 1.5 kg/chicken. In addition, the facility also uses a vacuum packaging machine to package the product for customers. The packaging clearly states product information, barcode to trace the product's origin, instructions for use, preservation, and the store's address and phone number.
In addition to sales channels on e-commerce platforms and social networks, the facility also focuses on participating in fairs and exhibitions to introduce products inside and outside the province to make more customers aware. Thanks to that, on average, the production facility consumes over 1,000 salted chickens per month, the market has expanded to provinces and cities across the country such as: Hanoi, Lam Dong , Thai Nguyen...
