The sweetness of sugar, the crunchy aroma of peanuts, and the richness of sesame blend together in each Suu Ha peanut candy (Thach Kenh commune, Thach Ha district, Ha Tinh ) to bring an unforgettable taste to those who have enjoyed it.
Mr. Nguyen Dang Suu - owner of Suu Ha peanut candy production facility (Tri Nang village, Thach Kenh commune, Thach Ha district) is a business accountant. Being inherently dynamic, he "turned" to find the profession of making peanut candy. After more than a year of "packing up" and traveling to all the traditional candy production villages of Thai Binh province to learn the trade, in 2016, he returned to his hometown to establish a candy production facility with a total investment of 500 million VND.
All beginnings are hard, the first batches of candy were not really delicious, the marketing of the product to agents and stores was not smooth. However, with determination, Mr. Suu found the recipe for making delicious candy. Because he understood, only good quality can create a brand in the market.
To produce peanut candy with a sweet, fragrant, rich taste, it must go through many meticulous steps and the skill of the craftsman. The ingredients for making peanut candy include: peanuts, sesame, white sugar and malt, selected by Mr. Suu with strict criteria; no chemicals are used to create flavor; the best quality malt is made entirely from rice sprouts.
To make a batch of delicious, crispy, fragrant peanut candy, the maker must master the technique and mix the mixture in the right proportions. Peanuts are dried until golden brown and fragrant. In addition to peanuts, white sesame must also be selected, removing the broken seeds, keeping the plump, round white seeds, adding more fat to the peanut candy.
The candy mixture consists of malt, white sugar, and unsalted butter, which is heated on the stove for 5-10 minutes. Then, it is mixed well with roasted peanuts until it is thick and hot, then poured onto a table with non-stick rice flour, and rolled flat with a rolling pin to ensure the candy is smooth and thick. Sprinkle with roasted sesame seeds, then cut into 4-6cm long bars.
Mixing and rolling the candy must be done quickly and smoothly, because the malt will harden when cooled and will easily break when cut.
Depending on the level of adjustment of the shaping machine, the candy is cut into small pieces.
Workers carefully separate each candy bar.
Mr. Suu said: Previously, the processing of peanut candy had to be done manually, requiring a lot of effort. Now, the steps are supported by machines such as: peanut roasting machines, peanut grinding machines, peanut color sorting machines, packaging machines, electric stoves, gas stoves. Thanks to that, candy production at family facilities is more productive, the products are even, beautiful, of good quality, and look more eye-catching.
On average, each day, Mr. Suu's facility produces 1,500 - 2,000 packages of various candies, earning nearly 1 billion VND/year. The product consumption market is mainly wholesale to large agents in Hanoi , Ninh Binh and Ho Chi Minh City.
The facility is providing jobs for 6 regular workers and 4 seasonal workers with salaries ranging from 5-6 million/person/month.
In addition to traditional sales channels through agents and stores in the provinces, Mr. Suu makes the most of online sales to introduce and market products to consumers.
In May 2023, Suu Ha peanut candy production facility achieved 3-star OCOP standards at the district level. Realizing that this is a production model that is both suitable for household economy and creates additional products, in the coming time, the locality will continue to support the facility to upgrade and expand the production line, creating conditions for participating in product display and introduction at major festivals of the year.
