“It’s where the sea meets the mountains, tradition meets modernity, and flavors are bold but never overpowering,” she says. “I grew up appreciating the subtle contrasts of salty and sweet, soft and hard, old and new. That sense of harmony shapes the way I cook and the way I live.”
Summer Le and her husband launched Nén Danang in 2017. Using 99% local ingredients and a strong storytelling approach, Nén became the first restaurant in Vietnam to receive the Michelin Green Star award in 2024.
She shared that this place is not only a favorite tourist destination, but also a developing economic center. Most importantly, Da Nang cuisine is delicious.
According to Summer Le, the culinary heritage here is a true feast for the senses, inviting exploration.

When you come to Da Nang, you must eat Quang noodles.
"The dish is a harmonious blend of sweet, salty, sour and spicy, and the crust is crispy. Banh mi has countless variations. In Da Nang, you will find about ten types of banh mi to start the day," Le said.
However, to have an authentic experience, Le said he had to eat Quang noodles.
For her, Da Nang's rich natural diversity is perfectly reflected in a bowl of Quang noodles.
What makes this dish special is that there is no set recipe. The toppings are varied, the most common being fresh shrimp, pork and quail eggs.
But when pork or shrimp aren't available, you can make it with whatever you have on hand. You'll find versions of Mi Quang made with chicken, beef, and even eel.
“I’ve always thought that Quang noodles represent the spirit of the people of Da Nang – resilient, adaptable, and deeply appreciative of the gifts of nature. No matter the circumstances, we always find a way to create something that is both delicious and nutritious,” said Summer Le.
