According to cultural researchers, cuisine is not only a basic human need but also reflects the identity, cultural values, and level of development of a nation or region. The UNESCO Global Geopark Lang Son has a population of approximately 627,500 people, accounting for about 78% of the province's total population. Each locality within the Geopark has its own unique and distinctive culinary culture, deeply rooted in the traditions of its ethnic groups.
According to Mr. Hoang Van Pao, Chairman of the Provincial Cultural Heritage Association: The cuisine in the UNESCO Global Geopark of Lang Son is rich and diverse, reflecting the distinct identities of the Tay, Nung, Dao, and Kinh ethnic groups. Each dish and drink contains unique cultural features, reflecting precious folk knowledge preserved and passed down through generations, such as: roasted pork, roasted duck with mac mat sauce; black sticky rice cake, mugwort cake, coong phu, khau nhuc, sour pho, rice rolls… along with famous spices such as chili bamboo shoots, mac mat sauce, wild lime…
In recent times, in order to maximize the potential of cuisine in the development of tourism in the UNESCO Global Geopark region of Lang Son, the Provincial Investment, Trade and Tourism Promotion Center (XTĐTTM&DL) has strengthened effective solutions to develop cuisine as one of the key spearheads creating momentum for tourism development.
Ms. Pham Thi Huong, Deputy Head of the Lang Son Geopark Management Department, Provincial Center for Trade Promotion, Trade and Tourism, said: "Cuisine is one of the important factors that helps tourists have the most enjoyable experiences when visiting the UNESCO Global Geopark Lang Son. Therefore, in addition to building infrastructure and forming tourist spots and routes within the geopark area, we also focus on surveying, researching, and coordinating with businesses, restaurants, and service providers that are partners with the park to include typical and characteristic dishes on the menu when welcoming tourists to the UNESCO Global Geopark Lang Son."
Accordingly, from 2023 to the present, relevant agencies and units have organized 10 training conferences, including content on cuisine such as equipping skills in food decoration and sauce preparation based on locally available ingredients. In addition, in conjunction with the development of the Geopark, the Lang Son Geopark Management Department also organized the "Culinary Workshop - Typical Products of the Lang Son Geopark Region" and signed agreements with several restaurants and hotels to form culinary experience tourism routes.
The promotion of culinary products in the UNESCO Global Geopark Lang Son has been intensified. From 2023 to the present, the Center for Tourism Promotion, Trade and Development has published nearly 10,000 tourism promotional publications, including culinary promotion, and has also published over 500 books on local products and cuisine of Lang Son. At the end of 2024, the Center for Tourism Promotion, Trade and Development announced the Lang Son culinary tourism product – Lang Son Foodtour. This attracted nearly 100 restaurants, eateries, hotels, and agricultural cooperatives in the province to register for the “Lang Son Food Tour” program; created trailers introducing culinary products and experiences in Lang Son; developed a Lang Son food tour map; and advertised on social media platforms to reach tourists so that more people everywhere can learn about, enjoy, and experience the local cuisine.
In parallel, agencies and units in the province, especially those located within the UNESCO Global Geopark Lang Son, have actively promoted local cuisine and specialties through social media and culinary competitions organized during holidays, festivals, and other events.
Mr. Khong Hong Minh, Vice Chairman of the People's Committee of Huu Lien commune, said: "As an area located within the UNESCO Global Geopark of Lang Son, to enhance the value of local specialty products for tourism development, we have recently sent homestay businesses to participate in culinary training courses organized by specialized units; and also participated in festivals and culinary competitions in the province. To date, all homestays in the area have created their own fanpages on social media platforms to promote the beauty and culinary products of the commune. Through this, many specialty products have become known to tourists and have been ordered, such as: sticky rice cakes, steamed pork rolls, mountain snails, etc."
With the joint efforts of all levels and sectors, and the consensus of the people, it is hoped that improving the quality and diversifying culinary products will not only enrich the tourism experience in the Geopark area but also give wings to the increasingly strong and sustainable development of tourism in Lang Son province in general.
