In particular, the high protein content in shiitake mushrooms is among the highest among mushrooms. Lentinan in shiitake mushrooms has been extensively studied for its ability to inhibit the growth and spread of cancer cells, especially stomach, colon, and breast cancers. Cook thoroughly before eating to ensure safety. Shiitake mushrooms need to be soaked before processing, but be careful not to soak for too long or overnight because it will lose nutrients and create conditions for bacteria. Soak for only 30 minutes and do not use water over 40 degrees Celsius.

In addition, when choosing to buy, choose mushrooms that are dark brown, have thick caps, are not wrinkled and have a characteristic aroma. Avoid buying mushrooms that have black spots, are mushy or have a strange smell.
