Taking advantage of the sunny days, Ms. Nguyen Thi Kieu Thanh, Phan Ri Cua commune, Lam Dong province, and her family are busy with the stages of processing and drying fish to sell to customers.

It is the season of southern fish so the source of seafood is quite abundant. With the advantage of being in a coastal area, the source of fresh raw fish is purchased by Ms. Thanh and some people in the same profession as soon as the fishermen come ashore.

Depending on the amount of fish at the warehouse and the customer's orders, the processing will depend on the quantity. At peak times, her family processes and dries nearly 100 kg of various types of fish, while on normal days, they process 30 - 70 kg of fresh fish.

This trader said: After cleaning the fish, washing it with seawater to keep it fresh, it will be dried on a grill for 1 day in strong sunlight. Some types such as yellowstripe scad are marinated with spices such as salt and chili before drying, depending on the customer's needs.

Not only Ms. Thanh, currently some people in the commune and coastal areas also follow the dried fish processing profession and consider this a traditional profession, creating the main income for the family.

According to the experience of those who work in this profession, seafood such as: scad, yellowstripe scad, barracuda... on average 3 - 4 kg of fresh fish when processed and dried in the sun will produce 1 kg of dried fish. The average selling price of these finished dried fish is from 170,000 - 230,000 VND/kg, depending on the type of fish.

After deducting input costs and labor, on average, for each kilogram of dried fish, the farmer earns a profit of about 40,000 - 70,000 VND/kg, depending on whether it is wholesale or retail.

Perhaps, for the locals and those who have visited the coastal land of Lam Dong, they all know the dishes and many types of dried seafood, one sun-dried, bearing the brand of this coastal region.

According to Ms. Do Thi Lan, Phu Thuy ward, her family often buys dried fish from familiar sources in Phu Quy, Phan Ri Cua, Phan Thiet. This item is popular, besides its fresh quality, it is also easy to preserve.

In addition to the coastal communes of Lam Dong, Phu Quy special zone is known as a place with many types of fresh, dried, and famous quality seafood such as: grouper, dried squid, mackerel, etc.

Ms. Tam - a trader specializing in drying fish and dried squid in Trieu Duong village, Phu Quy special zone said: "This year, the price of dried seafood has not increased compared to last year, except for dried squid products, which have increased in price, currently at 600,000 - 800,000 VND/kg for one-sun-dried squid and 850,000 VND to over 1 million VND/kg for two-sun-dried squid (depending on size). In addition, some "specialties" of Phu Quy such as: dried grouper, one-sun-dried mackerel have prices from 350,000 - 400,000 VND/kg.

It is no coincidence that the dried seafood brand of Lam Dong coastal area is known and favored by many people. Because the province has the advantage of a 192 km long coastline, a large inland water area, especially Phu Quy island located offshore. This is a condition for developing the marine economy , especially exploitation and logistics services for fisheries in offshore waters.

Not only is it a daily dish with a strong sea flavor for local people, dried seafood has now become a delicious seafood branded food, sold in markets inside and outside the province.

In particular, many tourists coming to the coastal area of ​​Lam Dong have been conquered by the rich, distinctive flavor of dried seafood - the delicious taste from the "blessings" of Lam Dong's sea.

According to research, dried seafood in general and dried fish in particular, in addition to the advantage of being easy to preserve, can also be processed into many diverse and rich dishes. Examples include: grilled or fried dried fish served with raw vegetables and dipped in fish sauce; dried fish salad, braised dried fish, etc.
