The jackfruit is chosen not to be too old, not too young, which is not delicious, but just a little bit over the threshold of being too young so that the jackfruit when processed is not "mushy" (because it is young) and not too tough (because it is old). Do not make too much jackfruit at once, only about 0.5 kg for 4 people. If there are many diners, we make more because this dish is quick to prepare.
Next, we boil the jackfruit until cooked, scoop the boiled jackfruit into a basket and slice it thinly and evenly, remember to pick out the young seeds and do not let them mix with the sliced jackfruit. The pig's ears are also boiled and chopped. The accompanying vegetables include betel leaves, perilla, onions, and chives. They are not to "decorate" the jackfruit dish but to increase the aroma and make the dish more delicious. Therefore, the amount of vegetables should not be too small. About two tablespoons of shrimp broth powder are sprinkled into these ingredients for a rich flavor. 200 grams of thin fresh vermicelli noodles are also prepared to add to the above ingredients.
The last two ingredients that make the dish rich in "essence", creating a difference from other rustic dishes are peanuts and onions. Thinly slice the onions, put them in a pan of boiling peanut oil, when the onions are fragrant, drizzle the oil evenly over all the prepared ingredients. As the oil is poured, mix the jackfruit evenly, so that each "jackfruit cell" has a little peanut oil "visiting". The fragrant roasted peanuts, not crushed, will be sprinkled on last.
Of course, you should prepare a bowl of fish sauce with crushed chili and fragrant Ly Son garlic so that if someone is not satisfied, you can add more to make it more flavorful. Jackfruit mixed with pig's ear, of course, is put in a bowl to eat, but using thin rice paper to scoop it up is "proper".
Remember not to cook more rice or there will be leftovers if the number of people enjoying it does not exceed the prescribed amount of jackfruit (500g for 4 people). Because you will be full before you know it!
