Within the framework of the 5th Vietcombank Mekong Delta International Marathon, Hau Giang organized 2 culinary competitions, with the desire to introduce local products, connect tourism development; create opportunities for artisans and chefs to exchange and learn.
Familiar cakes that make diners nostalgic are displayed at the Traditional Cake Contest.
Rich in the flavor of my hometown
The Hau Giang Province Traditional Cake Competition has become a regular event, held every two years, providing an opportunity for traditional cake makers in the province to compete, show off their skills, and preserve and promote traditional cakes that are very familiar and close.
This year, the contest attracted 21 teams with 63 traditional cake makers from districts, towns and cities in the province. The artisans chose cakes with the strong flavor of their hometown, expressing their sincere love for their homeland. Banh bo, banh chuoi, banh it tran, banh da lon, banh xeo, banh khot… through the skillful hands of the artisans have become colorful with rich, unforgettable flavors.
Ms. Nguyen Thi Ly, Deputy Director of the Department of Culture, Sports and Tourism, Head of the Organizing Committee of the Contest, said: “The contest has become familiar to traditional cake makers and people in the province. The artisans are very passionate about the traditional cake craft, always trying to innovate and create to make the cakes more attractive, beautiful, delicious but still retain the traditional flavor. This is the success, joy and happiness of the organizers. Not only organizing the contest for artisans to compete, Hau Giang also creates conditions for artisans to participate in regional cake making competitions, creating opportunities to exchange, connect and introduce hometown specialties”.
Elevating the "Fragrance and Color of Hau Giang"
The culinary contest “Hương sắc Hậu Giang” was first held in 2019. At that time, the Organizing Committee required chefs to prepare dishes from snakehead fish and Cầu Đức pineapple, two specialties that make up the unique brand of Hậu Giang.
This time, the Organizing Committee expanded the program so that chefs could freely create with ingredients that are specialties of Hau Giang as well as the Mekong Delta, to create diversity and richness for the ingredients, making impressive dishes.
38 teams from districts, towns and cities in the province, along with 4 teams from restaurants and hotels in Ho Chi Minh City, An Giang, Can Tho and Bac Lieu competed, creating impressive colors. Ms. Nguyen Thi Ngoc, a chef from Long Tri A commune, Long My town, shared: “I am really happy to participate in this competition, with professional chefs in and outside the province. Just a person who loves cooking, I have researched to be able to process very familiar ingredients from the products of my hometown. I have learned a lot, especially from professional chefs, to draw useful lessons for myself”.
Mr. Nguyen Loc, Chairman of the Mekong Delta Professional Chefs Association, General Director of Western Can Tho Culinary Vocational School, Head of the Jury, commented: “The chefs presented special dishes with careful investment. Therefore, the quality of each dish is very delicious. The chefs also demonstrated their professionalism, creating their own uniqueness, by not only investing in the quality of the dishes but also decorating them very impressively. The distinction between professionalism and non-professionalism has been brought much closer.”
This is a good sign, proving that the number of chefs in the province is increasing and they are interested in improving their skills and expertise to create more delicious and beautiful dishes. From available ingredients, through skillful hands, creativity and constant efforts to innovate, they have gradually improved their skills, contributing to raising the level of their homeland's cuisine.
