The Asian Record Organization has decided to establish 10 new Asian records for Vietnamese cuisine and specialty gifts. Five Vietnamese dishes honored as Asian specialties include: Saigon bread (Ho Chi Minh City), mussel rice (Thua Thien Hue), Phan Thiet hotpot (Binh Thuan), Ninh Hoa grilled spring rolls (Khanh Hoa), and vermicelli soup ( Soc Trang ).

It is not surprising that tours to Nha Trang always include a meal of Ninh Hoa grilled spring rolls. Ninh Hoa is a town 30 km north of Nha Trang, famous for many dishes: fish noodles, grilled spring rolls, coconut, sour spring rolls. The grilled spring rolls are quite unique, and then the journey to Nha Trang becomes a famous dish. If you are in Ho Chi Minh City, you will also encounter Ninh Hoa grilled spring rolls, but they are completely different from the spring rolls sold in Ninh Hoa and Nha Trang. The dish costs from 45,000 VND to 65,000 VND/portion (the shops selling 65,000 VND/portion are for tourists, not famous). A portion of spring rolls can be wrapped into 5-6 rolls, enough to fill you up, crispy fried finger-sized rice paper rolls, grilled pork rolls (minced pork with fat, seasoned with garlic, onion, MSG, salt, sugar), raw vegetables with salad, chives, herbs, fish mint, parsley, perilla... along with pickles, pickled onions and cucumbers, sliced green mango, chili and garlic. The dipping sauce varies from restaurant to restaurant, but the best is the thick, pinkish-yellow dipping sauce, containing peanuts, minced pork... sweet and salty taste (can be eaten plain). Rice paper is a thin type of rice paper, does not need to be dipped in water.

The way to eat grilled spring rolls is to put a rice paper on top of a crispy fried rice paper, grill the spring rolls with vegetables, cucumber, mango, roll them up and dip them in the sauce. Serve with garlic cloves, chili and pickles. Some newly opened tourist restaurants have changed the grilled meat to be sliced and served with vermicelli, which loses the uniqueness of the dish.
On the North-South route, tourists can stop by Ninh Hoa to eat spring rolls at the restaurants right on the bridge when going to Duc My, or go to the "squatting" restaurants in Ninh Hoa market. At the Middle Intersection (from Nha Trang - Ninh Hoa you will see: Inner Intersection, Middle Intersection and Outer Intersection) in Ninh Hoa, there are several restaurants selling grilled spring rolls, but the most famous is Mrs. Nam's restaurant with the current price of 45,000 VND/portion.

The Ninh Hoa people on their journey brought Ninh Hoa spring rolls to Nha Trang and other provinces and cities such as Ho Chi Minh City, Hanoi , Buon Ma Thuot and Pleiku. But Ninh Hoa grilled spring rolls eaten in Nha Trang are special. The beginning was Dang Van Quyen spring rolls (now inherited by Dang Van Quan's son) which are very popular with tourists and locals. Now Dang Van Quyen spring rolls have sour spring rolls to take far away, especially accepting delivery of grilled spring rolls to Ho Chi Minh City (spring rolls have been frozen, the eater just needs to defrost, put them in the microwave to heat them up to ensure quality).
Currently, in Nha Trang City, there are about 20 spring roll shops serving from afternoon to evening, located on Nguyen Thi Minh Khai, Le Loi, Hoang Van Thu, Le Thanh Phuong, Tran Duong, Tran Cao Van streets... near Dang Van Quyen, there is Vu Thanh An shop or the spring roll shop on Le Hong Phong street is also a choice for everyone.
When eating grilled spring rolls, the side dish is Ninh Hoa sour spring rolls. Ninh Hoa sour spring rolls are wrapped in star gooseberry leaves and banana leaves (other places use Acacia auriculiformis leaves and guava leaves). To ensure the quality of the spring rolls, no plastic is used for packaging and no preservatives are used. In addition to grilled spring rolls, sour spring rolls are also a gift for relatives and friends on the trip to Nha Trang. When buying, choose the type of spring rolls that will be sour after 1 to 2 days to ensure safety.
