The broth is made by boiling crab shells, mackerel, fish bones, and fresh vegetables and pineapple together. The crab and fish bring the freshness of the ocean, while the vegetables and fruits in the soup such as bamboo shoots, cabbage, and pineapple add a fresh sweetness and a slight sourness. This broth-cooked noodle dish is very suitable for the climate of Da Nang. Customers can add “homemade” fish cakes and crab cakes to the bowl of noodles. Both flavors are very mild. Adding a generous amount of black pepper can highlight the spicy and sweet taste of the dish.

The dish has a clear but flavorful broth, with an interesting combination of sweet, salty, sour, complemented by a refreshing touch of lemongrass. The restaurant only sells one type of noodle, but there are many ingredients to choose from including pig’s trotters, beef tendon, beef ribs, beef brisket, beef tongue and crab cakes. Each piece of meat is cooked to perfection, providing a harmonious combination. With each bowl of this delightful noodle, one can taste the dish prepared with love and care.

Nam Hien Jumping Shrimp Pancake (Bib Gourmand, Michelin Guide 2024)
The name banh xeo refers to the sound, it has a thin crispy skin made from rice flour, topped with fresh shrimp and served with rich flavor enhancers such as greens and herbs like mint leaves and basil. The pancake is then tightly wrapped in rice paper and dipped in a special peanut sauce. The sauce bursts with flavor and meat in the mouth, perfectly complementing the dish.

The egg nest dessert is both eye-catching and creative. The outer shell is made of salted caramel, which gives it a crunchy texture. Once the “egg shell” is removed, an upside-down egg is revealed inside. The “egg white” is a mousse made from young coconut and white chocolate, which gives it a soft texture. In the middle, the “egg yolk” is made from passion fruit, which bursts when bitten, and is juicy inside. Strawberry sauce adds a sour taste to the mousse, adding to its flavor. The crispy fried apple strips at the bottom do not overwhelm the delicate flavor of the dish.
