Researchers from Harvard University's TH Chan School of Public Health (USA) analyzed data over nearly 30 years, collected from more than 205,000 participants, to find out exactly the link between potatoes and the risk of diabetes.
Every 2 to 4 years, participants, who were healthy and did not have diabetes at the start of the study, were asked to report how often they ate potatoes: fried, baked, boiled or mashed.
During the study period, 22,299 people developed type 2 diabetes.

Eating a lot of fried potatoes increases the risk of diabetes by 20%
The results found that eating a lot of potatoes can increase the risk of diabetes. However, the greatest risk comes from fried potatoes. Meanwhile, baked, boiled or mashed potatoes do not cause significant harm.
The specific research results are as follows:
Eating three servings of potatoes per week (one serving is equivalent to one medium-sized potato of about 150 grams) increases the risk of diabetes by about 5%.
French fries alone increase the risk of diabetes by 20%, according to the health news site Eating Well.
Foods that help reduce the risk of diabetes
Conversely, replacing 3 servings of potatoes per week with whole grains (such as oats, brown rice, quinoa, etc.) reduces the risk of diabetes by about 8%.
In particular, replacing fried potatoes with whole grains reduced the risk by up to 19%; with baked, boiled or mashed potatoes, the reduction was 4%. However, replacing them with white rice increased the risk.
Clearly, it's not the potatoes that are harmful, but the way they're prepared that's worth noting: French fries increase the risk of type 2 diabetes, while other ways of preparing them have little effect.
The authors conclude: You don’t need to eliminate potatoes completely, but you should pay attention to how you prepare them and your overall eating habits. Boiled, baked, or mashed potatoes can still fit into a healthy diet, especially when combined with vegetables, healthy fats, and protein. However, fried potatoes should be limited to occasional enjoyment, not regular consumption.
