Cuisine is considered the "treasure" of the ancient capital of Hue (Thua Thien Hue) when the locality owns thousands of dishes from royal to folk, vegetarian dishes, cakes, noodles, specialty sweet soups... which are highly appreciated by domestic and international tourists when coming to this locality. With its strength in the culinary field, Hue is aiming to build a UNESCO creative city.

In the strategy of preserving and developing Hue culinary heritage, the goal of becoming a “Creative City of Gastronomy of the United Nations Educational,Scientific and Cultural Organization (UNESCO)” together with “Vietnam’s Culinary Capital” and “UNESCO Heritage System” are the three main pillars, creating a foundation to promote potential and strengths. This both consolidates the position as a large and unique cultural center of the country and positions the value of Hue cuisine in the world, while at the same time arousing the potential of Hue’s cultural industry in particular and Vietnam in general in the process of development and integration.

Among the 3,000 Vietnamese dishes recorded in the Nguyen Dynasty's Code of Conduct, Hue cuisine has up to 1,700 dishes. The preparation of dishes is considered a cultural feature of Hue. Over the years, the province has made efforts to preserve and promote traditional values, promote creativity for culinary development, contribute to creating livelihoods, solving jobs, income for people and creating unique local cultural and tourism products. This is in line with the requirements that UNESCO sets for candidates participating in the network.

At the scientific workshop "UNESCO Creative Cities Network and the ability to transform cultural resources in Hue" held on September 22, in Hue city, Mr. Phan Ngoc Tho, Standing Deputy Secretary of the Thua Thien Hue Provincial Party Committee, said that in order to honor the value of Hue cuisine, the province has recently developed a project "Culinary Capital" and registered intellectual property for a number of Hue specialties. For many years, the province has made efforts to preserve and promote traditional values, promote creativity for culinary development, contribute to creating livelihoods, solving jobs, income for people and creating unique local cultural and tourism products. This is in line with the requirements that UNESCO sets for candidates participating in the network.

Because this is one of the important elements of Hue culture, meeting the needs of society while creating opportunities to build an economic growth model associated with the development of cultural resources and people, protecting the ecological environment", Mr. Phan Ngoc Tho shared and said, Hue is a land with a long history, converging unique values ​​in the flow of Vietnamese culture through many periods. Choosing the creative urban model is an important orientation for Hue, an opportunity to transform heritage values ​​into assets so that people can get rich from what they have and are proud to preserve.

The selection of the culinary field and the process of preparing data for the application to become a member of the UCCN network in 2025 or 2027 are being systematically developed by Thua Thien Hue province and referencing the experiences of other cities in the region.

Dr. Ho Thang, Director of the Department of Science and Technology of Thua Thien - Hue province, said that it is necessary to build a brand for Hue traditional culinary products, using the intellectual property system as a competitive tool to develop the brand. Accordingly, it is necessary to build a value chain in product development and implement a framework of solutions to support the development of key provincial products associated with the value chain.

UCCN was initiated in 2004 with the aim of promoting cooperation between cities, taking creativity as a strategic factor for sustainable urban development. With a variety of dishes from royal to folk, vegetarian dishes; the connection between cuisine and the cultural space of the Ancient Capital... Thua Thien Hue has opportunities to become a member of UCCN based on the unique values ​​of cuisine./.
