Recently, Ben Groundwater, a veteran food writer for The Sydney Morning Herald, praised Vietnamese vermicelli soup with crab.

Introducing bun rieu, he said that this is a traditional Vietnamese dish, originating from the Red River Delta and gradually becoming widely known throughout the country and internationally. Ben Groundwater described this dish as having eye-catching colors, rich flavors, slightly spicy and unique with the crab rieu and blood served in squares, all placed neatly in a bowl.

The broth is made from pork bones, tomatoes and field crabs to create sweetness. The noodles used are thin noodles, accompanied by a variety of fillings such as tofu, crab paste, pork leg, beef leg, pork ribs, snails, etc. Accompanying vegetables often include shredded banana flowers, shredded water spinach, bean sprouts, herbs, etc. Diners can also add shrimp paste, fish sauce, vinegar, lemon, chili, etc. according to their preferences.

Ben Groundwater rated bun rieu as extremely delicious and can be eaten for breakfast, lunch and dinner. Learning more about regional cuisine, the author of the article found that Northern-style bun rieu often has simpler ingredients such as tomatoes, tofu, crab rieu, cartilage ribs, ham, snails. Meanwhile, the South has more diverse types of fillings such as pork, ham, crab cakes... Regardless of the style, bun rieu always has a rich and attractive flavor and impresses anyone who has ever enjoyed this specialty.
