Below is a simple way to cook vegetable soup at home, anyone can do it, it's quick to prepare and delicious, not boring.
- 150g minced pork
- 30g shiitake mushrooms
- Corn, carrots, kohlrabi, cauliflower
- Coriander, seasoning powder, salt
1. Prepare ingredients
Buy ready-made minced pork, choose the part that is bright pink and white and has no foul smell.
You can choose fresh or dried shiitake mushrooms. For fresh mushrooms, buy mushrooms that are medium in size, have short stems, tight caps, and are light brown in color. If you buy dried mushrooms, smell them carefully to see if they are moldy or have a strange smell.
Soak the mushrooms in warm water for about 30-60 minutes to soften them, then rinse them several times with water and drain. Wash the vegetables used to cook the soup, peel them, and cut them into bite-sized pieces. Cut the corn into small pieces.

Next is the process of making the meatballs. The minced pork (you can add wood ear mushrooms or chopped mushrooms for crunchiness and aroma) is cut into small pieces, skillfully stuffed with shiitake mushrooms, forming a plump and beautiful round ball.
Depending on the family, people can make the balls separately, without the mushrooms.
Put the pot of water on the stove, when the water boils, add the meatballs, after about 3-4 minutes, take them out.
2. Cook soup
You can cook the soup with the broth from the mushrooms for sweetness or use a new pot of water. When the water boils, add the corn, carrots and kohlrabi first, season to taste.
Wait for the ingredients to be cooked, then add the cauliflower and meatballs to avoid overcooking the vegetables. After about 4-5 minutes, when the soup is cooked, turn off the stove, ladle into a bowl and sprinkle chopped coriander on top.
