How to do it
Put pork skin in pot with green onion, ginger, 1 tablespoon cooking wine, cook over high heat for about 3 minutes.
Skim off the foam, when the pork skin is cooked and becomes transparent, take it out and wash it again with clean water. Use a knife to scrape off the white fat inside the pork skin.
Next, cut the pork skin into small square pieces and roll them with thread.

Take another pot, add a little oil and heat it up, add onion, ginger, star anise, pepper, bay leaves, cinnamon, dried chili and stir-fry until fragrant, add rolled pork skin and stir well.
Add an appropriate amount of boiling water, pour in the sugar water, add a little salt, soy sauce, stir well, cover, simmer for about 40 minutes.
