You may not know that pig skin contains 26.4% protein, 2.5 times more than pork, and more than 90% collagen and elastin. These nutrients can maintain skin cell moisture, help skin plump, smooth, elastic and reduce wrinkles.

Normally, people use pork skin to make jelly, but it can also be processed into the rolled pork skin dish below.

Ingredient

Pork skin, salt, soy sauce, cooking wine, green onion, ginger, star anise, pepper, cinnamon, bay leaves, dried chili.

How to do it

Put pork skin in pot with green onion, ginger, 1 tablespoon cooking wine, cook over high heat for about 3 minutes.

Skim off the foam, when the pork skin is cooked and becomes transparent, take it out and wash it again with clean water. Use a knife to scrape off the white fat inside the pork skin.

Next, cut the pork skin into small square pieces and roll them with thread.

Pour a little oil into the pot, add a little rock sugar, stir-fry until the sugar turns caramel color, then turn off the heat, add a moderate amount of water.

Take another pot, add a little oil and heat it up, add onion, ginger, star anise, pepper, bay leaves, cinnamon, dried chili and stir-fry until fragrant, add rolled pork skin and stir well.

Add an appropriate amount of boiling water, pour in the sugar water, add a little salt, soy sauce, stir well, cover, simmer for about 40 minutes.

Soak the pork skin in water for 2 hours, when eating, take it out, remove the veins, and slice thinly. The pork skin is now very soft, supple, salty, not greasy, and very delicious.
