After finishing our work, we stopped by An Truyen market, a typical village market located at the foot of Tam Giang river. There, people sell all the products of the village, from fish and shrimp to vegetables. Each stall sells a separate item, without partitions, from beginning to end. The market opens early, and by 9am it starts to close. The food stalls stay open until noon before slowly cleaning up. The food stalls have many dishes, but the most attractive is still the banh xeo dish made from ingredients from the largest brackish water lagoon system in Southeast Asia.

Whale pancake

The fish is caught from Tam Giang lagoon, very fresh and delicious. A pancake costs 15,000 VND, with ingredients including rice flour, a little bean sprouts, a little onion and especially a whole whale. The cake is dipped in pure fish sauce with a little spicy chili.

To get fresh ingredients, from early morning, these food stall owners go to the docks on the lagoon, sit and wait for people to harvest fish and shrimp and bring them in. They choose the freshest fish, bring them home, wash them, drain them, and then make cakes.

Making banh xeo is not too complicated. Clean the whale and put it in a small pan with a ladle of finely ground white rice flour. The cook keeps the heat at medium, covers the lid for about 3 minutes, then opens the lid and turns the cake to achieve a crispy texture on both sides, then covers the lid for about 2 more minutes to enjoy the finished cake. With whale banh xeo, diners often eat the cake first and then the fish meat. The cake is crispy and leaves an extremely unforgettable aftertaste.

Connoisseurs of banh xeo in the city always leave early to enjoy it in person. Sitting inside a village market, eating this specialty of the lagoon region always gives people a very different feeling.
