On February 28, Ms. Hoang My Hanh's tourist group (Saigon) arrived in Hanoi with 15 people, planning to travel by Interbus Lines' love cabin bus to Sapa that same night.
Mr. Ha's pho con sui is loved by many tourists when coming to Sapa.
Before arriving in Sapa, the group of tourists spent a day walking around Hanoi's Old Quarter. Everyone was excited because the next day they would see the sky, clouds, and mountains of Sapa with fog, the valley town filled with spring flowers, and especially experience the spring festivals of the indigenous people.
Ms. Hanh said that on this occasion, Sapa has held 3 festivals: Gau Tao of the Mong ethnic group, Long Tong of the Tay ethnic group, Put Tong of the Red Dao ethnic group, but there are still 2 other festivals: Sweeping Village festival of the Xa Pho ethnic group (from March 2 to March 3) with the wish to pray for villagers to have a peaceful life, healthy livestock and good crops and Roong Pooc festival of the Giay ethnic group (from March 9 to March 10), also known as the festival of going to the fields to pray for a bountiful harvest, peace and prosperity, favorable weather and wind.
"This will be a meaningful opportunity for the whole group to experience with the ethnic people in Sapa," said Ms. Hanh, adding: This is the third time she has traveled to Sapa, but each time she comes during a different season of this foggy town.
"Choosing to travel to Sapa this spring, the group is very lucky because at this time, going to the top of Fansipan is also free of charge. It is known that this program lasts until March 19, with many special programs such as Spring Festival opening the gate to heaven, Ban May launching the Ethnic Festival, recreating the most prominent and interesting customs in the Northwest highlands and each week will be a journey to discover different cultural values", Ms. Hanh shared more.

The Village Sweeping Festival is a unique cultural feature of the Xa Pho ethnic group in Sapa every spring.
Along with Ms. Hanh's group, Mr. Nguyen Huu Nam said that this was the fifth time he had come to Sapa, and every time he chose the night trip of Interbus Lines, he just needed to get on the bus, sleep, and arrive in Sapa the next morning.
"The first thing I do every time I come to Sapa is to go straight to Mr. Ha's pho con sui restaurant at 436 Dien Bien Phu, Sapa town for breakfast. This is a very strange and unique dish of Sapa. According to the restaurant owner, pho con sui is originally a Chinese dish, but because the Chinese often trade busily in the border area, this dish has become popular and gradually become a specialty of Lao Cai.
Many people affectionately call the dish "the memorable dish" in Sapa.
"Con sui is a dish made with flat noodles, similar to pho, but not served with broth but with a fragrant, thick sauce. Each bowl of con sui will have noodles, crispy fried potatoes, pork belly and boiled eggs. And especially, the broth is made from gac fruit with many health benefits," said Mr. Nam.
Learning more about this dish, many tourists said that every time they come to Mr. Ha's pho con sui, they cannot avoid waiting in line to order because the restaurant is always crowded with customers coming in and out continuously. According to the restaurant owner, it is estimated that every day there are up to 1,000 bowls of pho con sui served to domestic and foreign tourists. This has also become a culinary feature that attracts tourists to Sapa.
In addition to pho con sui, at this restaurant, visitors can also enjoy other dishes such as: wonton noodles and dumplings, which are both sweet in meat and sweet in vegetables, refreshing and bring a pleasant, warm feeling on cold days.
