Nem Ninh Hoa originates from Ninh Hoa town - a land rich in history of agarwood, about 35 km north of Nha Trang city. Nem Ninh Hoa has 2 types: nem chua and nem nuong. The pork used to make nem is freshly slaughtered, still hot and only the thigh and shoulder are used. After marinating with spices, the meat will be put into a mortar and pounded or ground. Wait for the meat to absorb the spices, roll it into finger-long sticks, then skewer it on bamboo sticks to grill over hot coals.

For nem chua, the minced meat will be lined with a layer of star gooseberry leaves, then wrapped in banana leaves or seed banana leaves, preferably, and left in a cool place for 2-3 days. When the nem is cooked, the outer layer will give the nem a slightly astringent taste, making the nem taste more special.
