Although the truth is not yet known, many people are confused because pork is a popular food used to prepare almost daily family meals. However, consumers, especially housewives, should not be too worried because with the naked eye, they can still recognize and choose fresh and delicious pork.

Chef Vu Truong An, culinary lecturer, vice president of Vietnamese Culinary Club - SPC shares some secrets to distinguish dirty pork from fresh meat to ensure food hygiene and safety:
1. Fresh pork is usually light pink or reddish-pink in color, with white fat. Avoid choosing meat that is gray or green in color because it may be spoiled.
2. Gently press your finger into the meat. If the meat springs back immediately, it is fresh. If the meat does not spring back or has an indentation, it is no longer fresh.
3. Fresh pork has a mild smell, no urine or rancid smell.
4. Fresh meat usually has no liquid or very little clear liquid, not slimy. Avoid choosing meat with strange colored liquid or slimy.
5. If buying meat with bones, choose bones that are ivory white and have no strange smell.

"People should not worry too much, because if they pay attention and apply the above methods, they can avoid buying poor quality pork. The special thing is to choose to buy meat at reputable markets or supermarkets, with clear origins, and establishments with full certificates of business and food hygiene and safety," said chef Vu Truong An.
