Every spring, farmers in Bac Ninh begin their carrot harvest. Vast carrot fields are harvested in designated areas, creating a beautiful blend of colors: rows of freshly pulled, golden carrots neatly arranged, interspersed with rows still bearing vibrant green leaves. Everyone works diligently to preserve the carrots' freshness: some pull up the roots and spread them on the rows; others trim the leaves; and still others pack them into bags. Rain or shine, they work enthusiastically and harmoniously. Finally, trucks transport the carrots to market. 
Carrots are a familiar food in every family's meals. This is because this root vegetable provides the body with abundant and essential nutrients. Carrots are easy to grow as long as they are planted in loose, sandy soil during the cooler part of the growing season – spring and autumn (carrots can tolerate frost). Depending on the variety and local growing conditions, carrots can take from 2 to 4 months to mature. They are usually sown in spring and late summer (August to early February of the following year) for continuous harvesting until autumn.
