Spicy fish noodle soup

To make a bowl of Hai Phong's typical fish noodle soup, the seller will choose both sea fish and freshwater fish. The fish that is often chosen is mackerel or grass carp. The fish meat must be firm and not smelly.

The sea fish is filtered to separate the bones and meat. The meat is pounded or ground, marinated with spices, mixed with dill and turmeric, and shaped into patties. The freshwater fish is washed, cut into small pieces, marinated with spices, coated in flour, and fried until crispy.

The vermicelli broth is simmered from pork bones along with the heads and bones of sea fish, bringing a unique and characteristic sweetness of Hai Phong fish vermicelli. In addition to fish, the toppings served with vermicelli also include fish intestines, sausage, shrimp, mantis shrimp, elephant ear, chopped banana flowers and various raw vegetables and herbs.

Breadsticks

When talking about Hai Phong cuisine, we cannot ignore spicy bread, also known as baguette. This is not only a familiar breakfast dish but also an attractive snack and gift when visiting the port city. The small baguette is grilled until golden brown, with a layer of pate inside, served with a spicy, slightly sour chili sauce.
