The bowl of vermicelli is topped with a layer of crispy golden fried onions and rich, nutty roasted peanuts. Before eating, diners use chopsticks to mix the ingredients so that the flavors are evenly distributed, revealing the green of the vegetables and the white of the vermicelli along with the beef sausage, stir-fried beef, and bean sprouts.
Although the beef in the bowl isn't much due to the addition of beef sausage, it's marinated well and stir-fried to perfection, resulting in a sweet, tender, and fragrant dish. The other ingredients are unmarinated, retaining their original flavors, yet they absorb the mildly sour and sweet broth, rich with the savory taste of fish sauce.
The restaurant only sells Southern Vietnamese beef noodle soup, but offers various price options for customers to choose from depending on their appetite, ranging from 40,000 to 70,000 VND.
The restaurant's clientele consists mostly of regulars and young people who learned about it through social media posts. Although it attracts diners with its "fire dance" in the kitchen, what keeps customers coming back is the cleanliness of the food and the fresh ingredients, according to Ms. Nguyen Thi Lan, 38, a resident of Khuong Thuong and a long-time regular customer of the restaurant.
