They sniff out prey with their whiskers in front of their mouths. When they see small fish or shrimp, crabs, or crabs, they immediately rush to grab it. They eat only delicious bait, so the meat of catfish is fragrant, sweet, and fatty. Countryside meals are often simple. But any meal with catfish is considered a "party".

My sister is very flirtatious, saying that sour soup with catfish is… “my love”. But it is only sour soup cooked with tamarind leaves. It is a subtle sour taste, a light sour taste, a delicate sour taste that quietly lingers on the tip of the tongue throughout the meal.

But in my heart, I was still on my parents' side: Using sour soup with star fruit as the basis. However, my mother still had a way to compromise: Today it was tamarind soup, next day it was star fruit soup. Although the sour soup with star fruit was a bit cloudy, it was really sour, really sour, really sour, so sour that it made my lips ache, but it was still delicious because it "goes well" with the fatty taste of the catfish.

Speaking of sourness, I would like to add more "sourness". Catfish soup, whether cooked with tamarind leaves or star fruit, if you add a few slices of ripe tomato, will increase the deliciousness. But if you add pineapple or sorrel leaves, the sourness will not be "pure". It will have something like a mixed hotpot. And that, in my opinion, will reduce the deliciousness of catfish.

Hot catfish soup, the catfish meat is fragrant, sweet, warm and soft, dipped in pure fish sauce with a little green chili, it is delicious. If you find a piece of fish with eggs, the eggs will give it a fragrant, attractive flavor.

Catfish also has two other "qualities" if grilled with salt and chili or braised with lemongrass and a little fresh turmeric. This is a savory and flavorful dish. My father and his neighbors often enjoy these two dishes with crispy rice paper and a few glasses of homemade rice wine.
